Ingredients:

  • 1 (10-inch long) sturdy French baguette, sliced diagonally about 1/2 inch thick
  • 3 Tablespoons Extra Virgin Olive Oil
  • 1 small garlic clove, peeled and halved (optional)
  • 8 ounces Brie Cheese, rind on, sliced about 1/4 inch thick
  • 1 medium crisp apple (Honeycrisp or Fuji), cored and thinly sliced
  • 1 teaspoon Fresh Thyme Leaves
  • Pinch of freshly ground Black Pepper
  • 2–3 Tablespoons Honey (for drizzling)

Instructions:

  1. Preheat your oven to 375°F (190°C). Slice the baguette diagonally into pieces about 1/2 inch (1.25 cm) thick.
  2. Arrange bread slices in a single layer on the baking sheet. Brush or drizzle lightly with olive oil on both sides.
  3. Immediately after removing the bread from the oven (while still hot), gently rub the cut surface of each slice with the halved garlic clove for a subtle flavour infusion.
  4. Top each slice of toasted bread with one slice of Brie cheese, ensuring the cheese covers most of the surface. Place 1-2 thin slices of apple on top of the Brie.
  5. Sprinkle the thyme leaves and a small crack of black pepper over the assembled crostini.
  6. Return the crostini to the oven. Bake for 8–10 minutes, or until the Brie is visibly melted, soft, and just starting to bubble slightly at the edges.
  7. Carefully remove from the oven. Immediately drizzle generously with honey over the melted cheese and apples.
  8. Arrange immediately on a platter and serve while warm.
