Ingredients:
- 1 (10-inch long) sturdy French baguette, sliced diagonally about 1/2 inch thick
- 3 Tablespoons Extra Virgin Olive Oil
- 1 small garlic clove, peeled and halved (optional)
- 8 ounces Brie Cheese, rind on, sliced about 1/4 inch thick
- 1 medium crisp apple (Honeycrisp or Fuji), cored and thinly sliced
- 1 teaspoon Fresh Thyme Leaves
- Pinch of freshly ground Black Pepper
- 2–3 Tablespoons Honey (for drizzling)
Instructions:
- Preheat your oven to 375°F (190°C). Slice the baguette diagonally into pieces about 1/2 inch (1.25 cm) thick.
- Arrange bread slices in a single layer on the baking sheet. Brush or drizzle lightly with olive oil on both sides.
- Immediately after removing the bread from the oven (while still hot), gently rub the cut surface of each slice with the halved garlic clove for a subtle flavour infusion.
- Top each slice of toasted bread with one slice of Brie cheese, ensuring the cheese covers most of the surface. Place 1-2 thin slices of apple on top of the Brie.
- Sprinkle the thyme leaves and a small crack of black pepper over the assembled crostini.
- Return the crostini to the oven. Bake for 8–10 minutes, or until the Brie is visibly melted, soft, and just starting to bubble slightly at the edges.
- Carefully remove from the oven. Immediately drizzle generously with honey over the melted cheese and apples.
- Arrange immediately on a platter and serve while warm.
