Ingredients:

  • 1 baguette, sliced into 1/2-inch thick rounds (approximately 300g / 10.5 oz)
  • 2 cloves garlic, peeled (approximately 10g / 0.35 oz)
  • 4 tablespoons olive oil, extra virgin (60 ml / 2 fl oz)
  • 1 pound ripe tomatoes, diced (approximately 450g / 16 oz)
  • 8 ounces fresh mozzarella, sliced or torn into bite-sized pieces (225g / 8 oz)
  • 1/4 cup fresh basil leaves, chopped (approximately 15g / 0.5 oz)
  • Salt and freshly ground black pepper to taste
  • 1/2 cup balsamic vinegar (120ml / 4 fl oz)
  • 1 tablespoon honey or maple syrup (15ml / 0.5 fl oz) (optional, for extra sweetness)

Instructions:

  1. Preheat oven to 375°F (190°C). Slice the baguette and brush both sides of each slice with olive oil.
  2. Arrange the bread slices on a baking sheet and toast in the preheated oven until golden brown, about 5-8 minutes.
  3. While the bread is still warm, rub each slice with a clove of garlic.
  4. Combine balsamic vinegar and honey (if using) in a small saucepan. Bring to a simmer over medium heat and cook until reduced by half and slightly thickened, about 5-10 minutes. Watch carefully to prevent burning!
  5. Top each toasted slice with diced tomatoes, mozzarella, and fresh basil. Season with salt and pepper.
  6. Drizzle with balsamic glaze (either homemade or store-bought) and serve immediately.
