Ingredients:
- 1 baguette, sliced into 1/2-inch thick rounds (approximately 300g / 10.5 oz)
- 2 cloves garlic, peeled (approximately 10g / 0.35 oz)
- 4 tablespoons olive oil, extra virgin (60 ml / 2 fl oz)
- 1 pound ripe tomatoes, diced (approximately 450g / 16 oz)
- 8 ounces fresh mozzarella, sliced or torn into bite-sized pieces (225g / 8 oz)
- 1/4 cup fresh basil leaves, chopped (approximately 15g / 0.5 oz)
- Salt and freshly ground black pepper to taste
- 1/2 cup balsamic vinegar (120ml / 4 fl oz)
- 1 tablespoon honey or maple syrup (15ml / 0.5 fl oz) (optional, for extra sweetness)
Instructions:
- Preheat oven to 375°F (190°C). Slice the baguette and brush both sides of each slice with olive oil.
- Arrange the bread slices on a baking sheet and toast in the preheated oven until golden brown, about 5-8 minutes.
- While the bread is still warm, rub each slice with a clove of garlic.
- Combine balsamic vinegar and honey (if using) in a small saucepan. Bring to a simmer over medium heat and cook until reduced by half and slightly thickened, about 5-10 minutes. Watch carefully to prevent burning!
- Top each toasted slice with diced tomatoes, mozzarella, and fresh basil. Season with salt and pepper.
- Drizzle with balsamic glaze (either homemade or store-bought) and serve immediately.
