Ingredients:
- 1 cup (120g) all-purpose flour, plus more for dusting
- ½ teaspoon (2.5g) salt
- ½ teaspoon (2.5g) paprika (smoked paprika is even better!)
- ½ cup (113g) cold unsalted butter, cut into small cubes
- 4 ounces (113g) sharp cheddar cheese, finely grated (about 1 cup)
- 3-4 tablespoons (45-60ml) ice water
- Everything bagel seasoning (optional)
- Coarse sea salt (optional)
- Poppy seeds (optional)
- Sesame seeds (optional)
Instructions:
- In a food processor or mixing bowl, combine the flour, salt, and paprika.
- Cut in the cold butter until the mixture resembles coarse crumbs. Use food processor until combined, or with pastry blender.
- Stir in the grated cheddar cheese.
- Gradually add ice water, one tablespoon at a time, until the dough comes together.
- Form the dough into a disc, wrap it tightly in plastic wrap, and chill in the refrigerator for at least 30 minutes.
- Preheat oven to 375°F (190°C).
- On a lightly floured surface, roll out the dough to about ⅛-inch thickness.
- Use a pizza cutter or sharp knife to cut the dough into desired shapes (squares, rectangles, etc.).
- Carefully transfer the crackers to a baking sheet lined with parchment paper or a silicone baking mat.
- Sprinkle with everything bagel seasoning, coarse sea salt, poppy seeds, or sesame seeds (optional).
- Bake for 12-15 minutes, or until golden brown around the edges.
- Let the crackers cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
