Ingredients:

  • 1 cup (120g) all-purpose flour, plus more for dusting
  • ½ teaspoon (2.5g) salt
  • ½ teaspoon (2.5g) paprika (smoked paprika is even better!)
  • ½ cup (113g) cold unsalted butter, cut into small cubes
  • 4 ounces (113g) sharp cheddar cheese, finely grated (about 1 cup)
  • 3-4 tablespoons (45-60ml) ice water
  • Everything bagel seasoning (optional)
  • Coarse sea salt (optional)
  • Poppy seeds (optional)
  • Sesame seeds (optional)

Instructions:

  1. In a food processor or mixing bowl, combine the flour, salt, and paprika.
  2. Cut in the cold butter until the mixture resembles coarse crumbs. Use food processor until combined, or with pastry blender.
  3. Stir in the grated cheddar cheese.
  4. Gradually add ice water, one tablespoon at a time, until the dough comes together.
  5. Form the dough into a disc, wrap it tightly in plastic wrap, and chill in the refrigerator for at least 30 minutes.
  6. Preheat oven to 375°F (190°C).
  7. On a lightly floured surface, roll out the dough to about ⅛-inch thickness.
  8. Use a pizza cutter or sharp knife to cut the dough into desired shapes (squares, rectangles, etc.).
  9. Carefully transfer the crackers to a baking sheet lined with parchment paper or a silicone baking mat.
  10. Sprinkle with everything bagel seasoning, coarse sea salt, poppy seeds, or sesame seeds (optional).
  11. Bake for 12-15 minutes, or until golden brown around the edges.
  12. Let the crackers cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
