Ingredients:
- 225g (8 oz) ground beef (20% fat)
- 1 tbsp vegetable oil
- ½ medium onion, finely chopped (about 50g / 1.75 oz)
- 1 tsp smoked paprika
- ½ tsp garlic powder
- ½ tsp onion powder
- ¼ tsp cayenne pepper (optional)
- ½ tsp kosher salt
- ¼ tsp black pepper
- 2 tbsp ketchup
- 1 tbsp yellow mustard
- 1 tbsp dill pickle relish, drained
- 2 large (10-12 inch) flour tortillas
- 115g (4 oz) shredded cheddar cheese
- 2 tbsp unsalted butter, melted
- Shredded lettuce (optional)
- Diced tomatoes (optional)
- Pickle slices (optional)
- Burger sauce (Thousand Island or similar) (optional)
Instructions:
- Heat oil in a large skillet over medium-high heat. Add onion and sauté until softened, about 3 minutes. Add ground beef and cook, breaking it up with a spatula, until browned. Drain off any excess grease.
- Stir in smoked paprika, garlic powder, onion powder, cayenne pepper (if using), salt, and pepper. Cook for 1 minute more, stirring constantly, until fragrant.
- Stir in ketchup, mustard, and pickle relish. Reduce heat to low and simmer for 5 minutes, stirring occasionally, to allow flavors to meld.
- Spread half of the shredded cheddar cheese evenly over one tortilla. Top with half of the beef filling. Sprinkle with the remaining cheese.
- Fold the tortilla in half. Brush the outside of the quesadilla with melted butter.
- Place the quesadilla in the same skillet (wipe it clean first, if needed) over medium heat. Cook for 3-4 minutes per side, or until golden brown and the cheese is melted and gooey.
- Remove the quesadilla from the skillet and let it cool slightly. Cut into wedges and serve immediately with your favorite burger toppings. Repeat steps 4-7 for the second quesadilla.
