Ingredients:

  • 225g (8 oz) ground beef (20% fat)
  • 1 tbsp vegetable oil
  • ½ medium onion, finely chopped (about 50g / 1.75 oz)
  • 1 tsp smoked paprika
  • ½ tsp garlic powder
  • ½ tsp onion powder
  • ¼ tsp cayenne pepper (optional)
  • ½ tsp kosher salt
  • ¼ tsp black pepper
  • 2 tbsp ketchup
  • 1 tbsp yellow mustard
  • 1 tbsp dill pickle relish, drained
  • 2 large (10-12 inch) flour tortillas
  • 115g (4 oz) shredded cheddar cheese
  • 2 tbsp unsalted butter, melted
  • Shredded lettuce (optional)
  • Diced tomatoes (optional)
  • Pickle slices (optional)
  • Burger sauce (Thousand Island or similar) (optional)

Instructions:

  1. Heat oil in a large skillet over medium-high heat. Add onion and sauté until softened, about 3 minutes. Add ground beef and cook, breaking it up with a spatula, until browned. Drain off any excess grease.
  2. Stir in smoked paprika, garlic powder, onion powder, cayenne pepper (if using), salt, and pepper. Cook for 1 minute more, stirring constantly, until fragrant.
  3. Stir in ketchup, mustard, and pickle relish. Reduce heat to low and simmer for 5 minutes, stirring occasionally, to allow flavors to meld.
  4. Spread half of the shredded cheddar cheese evenly over one tortilla. Top with half of the beef filling. Sprinkle with the remaining cheese.
  5. Fold the tortilla in half. Brush the outside of the quesadilla with melted butter.
  6. Place the quesadilla in the same skillet (wipe it clean first, if needed) over medium heat. Cook for 3-4 minutes per side, or until golden brown and the cheese is melted and gooey.
  7. Remove the quesadilla from the skillet and let it cool slightly. Cut into wedges and serve immediately with your favorite burger toppings. Repeat steps 4-7 for the second quesadilla.
