Ingredients:

  • 1 cup (226g/8 oz) unsalted butter, softened
  • ¾ cup (150g/5.3 oz) packed light brown sugar
  • ½ cup (100g/3.5 oz) granulated sugar
  • 2 large eggs
  • 1 teaspoon (5ml) pure vanilla extract
  • 1 ½ cups (192g/6.75 oz) all-purpose flour
  • 1 teaspoon (5ml) baking soda
  • ½ teaspoon (2.5ml) ground cinnamon
  • ¼ teaspoon (1.25ml) salt
  • 3 cups (240g/8.5 oz) rolled oats (old-fashioned oats), divided
  • 1 cup (170g/6 oz) raisins

Instructions:

  1. Preheat oven to 350°F (175°C). Line baking pan with parchment paper or foil, leaving an overhang.
  2. In a large bowl, cream together the softened butter, brown sugar, and granulated sugar until light and fluffy.
  3. Beat in the eggs one at a time, then stir in the vanilla extract.
  4. In a separate bowl, whisk together the flour, baking soda, cinnamon, and salt.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Be careful not to overmix!
  6. Stir in 2 cups of the rolled oats and the raisins until evenly distributed.
  7. Press the dough evenly into the prepared baking pan. Sprinkle the remaining 1 cup of oats evenly over the top and gently press them into the dough.
  8. Bake for 25-30 minutes, or until the edges are golden brown and a toothpick inserted into the center comes out with a few moist crumbs.
  9. Let the bars cool completely in the pan before lifting them out using the parchment paper overhang. Cut into squares and serve. These oatmeal raisin cookie bars are bliss!
