Ingredients:
- 1 cup (226g/8 oz) unsalted butter, softened
- ¾ cup (150g/5.3 oz) packed light brown sugar
- ½ cup (100g/3.5 oz) granulated sugar
- 2 large eggs
- 1 teaspoon (5ml) pure vanilla extract
- 1 ½ cups (192g/6.75 oz) all-purpose flour
- 1 teaspoon (5ml) baking soda
- ½ teaspoon (2.5ml) ground cinnamon
- ¼ teaspoon (1.25ml) salt
- 3 cups (240g/8.5 oz) rolled oats (old-fashioned oats), divided
- 1 cup (170g/6 oz) raisins
Instructions:
- Preheat oven to 350°F (175°C). Line baking pan with parchment paper or foil, leaving an overhang.
- In a large bowl, cream together the softened butter, brown sugar, and granulated sugar until light and fluffy.
- Beat in the eggs one at a time, then stir in the vanilla extract.
- In a separate bowl, whisk together the flour, baking soda, cinnamon, and salt.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Be careful not to overmix!
- Stir in 2 cups of the rolled oats and the raisins until evenly distributed.
- Press the dough evenly into the prepared baking pan. Sprinkle the remaining 1 cup of oats evenly over the top and gently press them into the dough.
- Bake for 25-30 minutes, or until the edges are golden brown and a toothpick inserted into the center comes out with a few moist crumbs.
- Let the bars cool completely in the pan before lifting them out using the parchment paper overhang. Cut into squares and serve. These oatmeal raisin cookie bars are bliss!
