Instructions:
- Pour 1/4 cup chia seeds and 1 pinch fine sea salt into your jar. Note: Adding salt to the dry seeds ensures even distribution.
- Pour in 1 cup unsweetened almond milk, 1 tablespoon maple syrup, and 1/2 teaspoon pure vanilla extract.
- Stir vigorously for 60 seconds until no seed clusters remain visible.
- Let the jar sit on the counter for 10 minutes. Note: This is when the initial gel begins to form.
- Whisk again for another 30 seconds until the mixture looks slightly thickened and uniform.
- Secure the lid and place the jar in the refrigerator.
- Refrigerate for at least 4 hours until the pudding is firm and holds its shape on a spoon.
- Give it one last stir before serving to redistribute any settled liquid.
- Add your favorite toppings just before eating to maintain their texture.
