Ingredients:

  • 1 cup (225g) unsalted butter, softened
  • 1 cup (200g) brown sugar, packed
  • 1/2 cup (100g) granulated sugar
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 2 cups (250g) all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup (175g) chocolate chips (semi-sweet or milk chocolate)
  • 2 cups (340g) chocolate chips (dark or milk chocolate)
  • 1 teaspoon coconut oil (optional, for sheen)
  • Sea salt for sprinkling
  • Additional toppings like crushed nuts or sprinkles

Instructions:

  1. Preheat oven to 350°F (175°C).
  2. Line the baking pan with parchment paper, allowing some overhang for easy removal.
  3. In a bowl, cream together the softened butter, brown sugar, and granulated sugar until light and fluffy.
  4. Add eggs, one at a time, mixing well after each addition. Stir in the vanilla extract.
  5. In a separate bowl, whisk together flour, baking soda, and salt. Gradually add to the wet mixture until combined.
  6. Fold in the chocolate chips.
  7. Spread the cookie dough evenly in the prepared pan. Bake for 10-12 minutes until edges are golden but the center is still soft.
  8. Allow the cookie layer to cool in the pan while preparing the chocolate layer.
  9. In a microwave-safe bowl, melt the chocolate chips and coconut oil in 30-second intervals, stirring until smooth.
  10. Once the cookie layer is cool, spread the melted chocolate evenly over the top.
  11. Sprinkle with sea salt and any additional toppings you desire.
  12. Refrigerate for at least 30 minutes until the chocolate sets.
  13. Remove from the pan using parchment overhang, cut into pieces, and enjoy!
