Ingredients:
- 2.5 cups all-purpose flour
- 1 cup unsalted butter, chilled and cubed
- 1 tsp salt
- 8 tbsp ice-cold water
- 1.5 lbs boneless, skinless chicken breast, cubed
- 2 tbsp olive oil
Instructions:
- Combine flour and salt in a large bowl.
- Add chilled butter cubes and use a pastry cutter or fork to work the butter into the flour until it resembles coarse crumbs with some pea-sized chunks remaining.
- Add ice water one tablespoon at a time, stirring gently until the dough just holds together.
- Shape the dough into a disk, wrap in plastic, and refrigerate for 30 minutes.
- Heat olive oil in a skillet over medium-high heat.
- Add chicken cubes, seasoning with salt and pepper, and sear until golden brown.
- Remove chicken from the skillet and set aside.
