Ingredients:

  • 2.5 cups all-purpose flour
  • 1 cup unsalted butter, chilled and cubed
  • 1 tsp salt
  • 8 tbsp ice-cold water
  • 1.5 lbs boneless, skinless chicken breast, cubed
  • 2 tbsp olive oil

Instructions:

  1. Combine flour and salt in a large bowl.
  2. Add chilled butter cubes and use a pastry cutter or fork to work the butter into the flour until it resembles coarse crumbs with some pea-sized chunks remaining.
  3. Add ice water one tablespoon at a time, stirring gently until the dough just holds together.
  4. Shape the dough into a disk, wrap in plastic, and refrigerate for 30 minutes.
  5. Heat olive oil in a skillet over medium-high heat.
  6. Add chicken cubes, seasoning with salt and pepper, and sear until golden brown.
  7. Remove chicken from the skillet and set aside.
