Ingredients:
- 2 cups (250g) all-purpose flour
- 1 cup (200g) granulated sugar
- 1 tbsp baking powder
- 1 tsp baking soda
- 1 tsp ground cinnamon
- ½ tsp salt
- ½ cup (120ml) unsalted butter, melted
- 2 large eggs
- 1 cup (240ml) milk
- 1 tsp vanilla extract
- 2 cups (about 2 medium) apples, peeled and diced (preferably Granny Smith or Fuji)
- ¼ cup (50g) brown sugar, packed
- 1 tsp ground cinnamon
Instructions:
- Preheat the oven to 350°F (175°C) and grease or line a muffin tin.
- In a large mixing bowl, whisk together flour, sugar, baking powder, baking soda, cinnamon, and salt.
- In a separate bowl, whisk together melted butter, eggs, milk, and vanilla.
- Combine wet and dry ingredients until just mixed—do not overmix.
- Fold in apples gently until evenly distributed.
- Spoon batter into prepared muffin tin using an ice cream scoop, filling each cup about 2/3 full.
- Mix brown sugar with cinnamon, then sprinkle on top of muffins.
- Bake for 18-20 minutes or until a toothpick inserted comes out clean.
- Cool the muffins in the tin for 5 minutes, then transfer to a cooling rack.
