Ingredients:

  • 2 cups (250g) all-purpose flour
  • 1 cup (200g) granulated sugar
  • 1 tbsp baking powder
  • 1 tsp baking soda
  • 1 tsp ground cinnamon
  • ½ tsp salt
  • ½ cup (120ml) unsalted butter, melted
  • 2 large eggs
  • 1 cup (240ml) milk
  • 1 tsp vanilla extract
  • 2 cups (about 2 medium) apples, peeled and diced (preferably Granny Smith or Fuji)
  • ¼ cup (50g) brown sugar, packed
  • 1 tsp ground cinnamon

Instructions:

  1. Preheat the oven to 350°F (175°C) and grease or line a muffin tin.
  2. In a large mixing bowl, whisk together flour, sugar, baking powder, baking soda, cinnamon, and salt.
  3. In a separate bowl, whisk together melted butter, eggs, milk, and vanilla.
  4. Combine wet and dry ingredients until just mixed—do not overmix.
  5. Fold in apples gently until evenly distributed.
  6. Spoon batter into prepared muffin tin using an ice cream scoop, filling each cup about 2/3 full.
  7. Mix brown sugar with cinnamon, then sprinkle on top of muffins.
  8. Bake for 18-20 minutes or until a toothpick inserted comes out clean.
  9. Cool the muffins in the tin for 5 minutes, then transfer to a cooling rack.
