Ingredients:
- 2 cups (250g) all-purpose flour, plus more for dusting
- 1/4 cup (50g) granulated sugar
- 1 tbsp baking powder
- 1/4 tsp salt
- 1/2 cup (113g) unsalted butter, very cold, cut into small cubes
- 1 cup (240ml) heavy cream, plus extra for brushing
- 1 tsp vanilla extract (optional)
- Clotted cream (Optional)
- Strawberry jam or your favorite preserve (Optional)
Instructions:
- Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
- In a large bowl, whisk together the flour, sugar, baking powder, and salt.
- Cut the cold butter into the flour mixture using a pastry cutter or fork until the mixture resembles coarse crumbs. Work quickly to keep the butter cold.
- Stir in the heavy cream and vanilla extract (if using) until just combined. The dough will be shaggy.
- Turn the dough out onto a lightly floured surface. Gently pat the dough into a 1-inch thick circle.
- Use a 2-inch round cutter (or a sharp knife) to cut out the scones. Do not twist the cutter, as this can prevent them from rising properly. Re-roll the scraps if necessary, but try to minimize handling the dough.
- Place the scones on the prepared baking sheet, leaving a little space between them.
- Brush the tops of the scones with a little extra heavy cream.
- Bake for 15-20 minutes, or until golden brown. These recipe scone are just amazing.
- Transfer the scones to a wire rack to cool slightly before serving.
