Ingredients:

  • 2 cups (250g) all-purpose flour, plus more for dusting
  • 1/4 cup (50g) granulated sugar
  • 1 tbsp baking powder
  • 1/4 tsp salt
  • 1/2 cup (113g) unsalted butter, very cold, cut into small cubes
  • 1 cup (240ml) heavy cream, plus extra for brushing
  • 1 tsp vanilla extract (optional)
  • Clotted cream (Optional)
  • Strawberry jam or your favorite preserve (Optional)

Instructions:

  1. Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. In a large bowl, whisk together the flour, sugar, baking powder, and salt.
  3. Cut the cold butter into the flour mixture using a pastry cutter or fork until the mixture resembles coarse crumbs. Work quickly to keep the butter cold.
  4. Stir in the heavy cream and vanilla extract (if using) until just combined. The dough will be shaggy.
  5. Turn the dough out onto a lightly floured surface. Gently pat the dough into a 1-inch thick circle.
  6. Use a 2-inch round cutter (or a sharp knife) to cut out the scones. Do not twist the cutter, as this can prevent them from rising properly. Re-roll the scraps if necessary, but try to minimize handling the dough.
  7. Place the scones on the prepared baking sheet, leaving a little space between them.
  8. Brush the tops of the scones with a little extra heavy cream.
  9. Bake for 15-20 minutes, or until golden brown. These recipe scone are just amazing.
  10. Transfer the scones to a wire rack to cool slightly before serving.
