- 1/4 teaspoon (1.5g) salt
- 1 tablespoon (12g) granulated sugar (optional)
- 1 1/4 cups (300ml) milk (whole or 2%)
- 2 large eggs
- 2 tablespoons (28g) unsalted butter, melted, plus more for greasing
- 1/2 teaspoon vanilla extract (optional)
Instructions:
- Whisk together flour, salt, and sugar (if using) in a large mixing bowl.
- In a separate bowl (or a blender), whisk together milk, eggs, melted butter, and vanilla extract (if using).
- Gradually pour the wet ingredients into the dry ingredients, whisking continuously until just combined. Do not overmix.
- Cover the batter and let it rest at room temperature for at least 30 minutes (or up to 2 hours in the refrigerator).
- Heat your crepe pan or non-stick skillet over medium heat.
- Lightly grease the pan with melted butter or cooking spray.
- Pour about 1/4 cup (60 ml) of batter onto the center of the hot pan. Immediately swirl the pan to evenly distribute the batter into a thin circle.
- Return the pan to the heat and cook for 1-2 minutes, or until the edges look dry and the bottom is lightly golden brown.
- Use a thin spatula to carefully flip the crepe. Cook for another 30-60 seconds, or until the second side is lightly golden brown.
- Transfer the cooked crepe to a plate. Repeat steps with remaining batter, stacking crepes.
