  • 1 1/4 cups (300ml) milk (whole or 2%)

  • 2 tablespoons (28g) unsalted butter, melted, plus more for greasing
  • 1/2 teaspoon vanilla extract (optional)

Instructions:

  1. Whisk together flour, salt, and sugar (if using) in a large mixing bowl.
  2. In a separate bowl (or a blender), whisk together milk, eggs, melted butter, and vanilla extract (if using).
  3. Gradually pour the wet ingredients into the dry ingredients, whisking continuously until just combined. Do not overmix.
  4. Cover the batter and let it rest at room temperature for at least 30 minutes (or up to 2 hours in the refrigerator).
  5. Heat your crepe pan or non-stick skillet over medium heat.
  6. Lightly grease the pan with melted butter or cooking spray.
  7. Pour about 1/4 cup (60 ml) of batter onto the center of the hot pan. Immediately swirl the pan to evenly distribute the batter into a thin circle.
  8. Return the pan to the heat and cook for 1-2 minutes, or until the edges look dry and the bottom is lightly golden brown.
  9. Use a thin spatula to carefully flip the crepe. Cook for another 30-60 seconds, or until the second side is lightly golden brown.
  10. Transfer the cooked crepe to a plate. Repeat steps with remaining batter, stacking crepes.
