Ingredients:

  • Food coloring (optional)

Instructions:

  1. In a bowl, whisk together flour, baking powder, and salt.
  2. In a separate bowl, cream together butter and sugar until light and fluffy.
  3. Mix in egg and vanilla until well combined.
  4. Gradually add dry ingredients to the wet mixture.
  5. Shape the dough into a disk, wrap in plastic wrap, and refrigerate for 30 minutes.
  6. Preheat the oven to 350°F (175°C).
  7. On a floured surface, roll out the dough to about ¼ inch thick.
  8. Cut into desired shapes and place on baking sheets lined with parchment.
  9. Bake in preheated oven for 10-12 minutes, until the edges are just golden.
  10. Allow cookies to cool on the baking sheet for a few minutes, then transfer to a wire rack.
  11. In a mixing bowl, beat melted butter with powdered sugar and milk, adding vanilla until smooth.
  12. Adjust consistency with more milk or powdered sugar as needed.
  13. Once cookies are completely cool, frost with icing and add sprinkles if desired.
