Ingredients:

  • 4 cups all-purpose flour
  • 1 tablespoon granulated sugar
  • 2 teaspoons salt
  • 2 teaspoons active dry yeast
  • 1 ½ cups warm water (about 110°F/43°C)
  • 1 tablespoon malt syrup (optional)
  • 1 large pot of water
  • 2 tablespoons baking soda
  • Sesame seeds (optional)
  • Poppy seeds (optional)
  • Everything bagel seasoning (optional)

Instructions:

  1. Combine warm water, sugar, and yeast in a bowl. Let sit for 5-10 minutes until foamy.
  2. In a mixing bowl, combine flour, salt, and malt syrup (if using). Add the yeast mixture and mix until a dough forms.
  3. Knead the dough for about 8-10 minutes until smooth and elastic. Alternatively, use a stand mixer on low speed.
  4. Place the dough in a greased bowl, cover it, and let it rise for about 1 hour or until doubled in size.
  5. Punch down the dough, divide it into 8 equal pieces, and shape each piece into a round bagel with a hole in the middle.
  6. Let bagels rest for 30 minutes, covered with a damp cloth.
  7. Bring a large pot of water to a gentle boil and add baking soda.
  8. Boil each bagel for 30-60 seconds on each side, then remove with a slotted spoon and place them on a parchment-lined baking sheet.
  9. Sprinkle bagels with desired toppings.
  10. Preheat the oven to 425°F (220°C) and bake bagels for 20-25 minutes until golden brown.
