Ingredients:

  • 6 cups chicken broth (low sodium preferred)
  • 1/2 cup Pastina pasta (star-shaped pasta)
  • 2 tablespoons extra virgin olive oil
  • 1 small onion, finely diced
  • 2 cloves garlic, minced
  • 1/4 cup grated Parmesan cheese, plus more for serving
  • 2 tablespoons fresh parsley, chopped
  • Salt and freshly ground black pepper to taste
  • Optional: 1/4 cup grated carrot

Instructions:

  1. Heat olive oil in the saucepan over medium heat. Add diced onion and cook until softened and translucent (about 5 minutes). Add minced garlic and cook for another minute until fragrant.
  2. Pour in the chicken broth and bring to a simmer.
  3. Once simmering, add the pastina pasta. Cook according to package directions (usually about 8-10 minutes), stirring occasionally, until pasta is tender.
  4. Remove from heat. Stir in Parmesan cheese and chopped parsley. Season with salt and pepper to taste.
  5. Ladle into bowls and serve immediately. Offer extra Parmesan cheese for topping.
