Ingredients:
- 6 cups chicken broth (low sodium preferred)
- 1/2 cup Pastina pasta (star-shaped pasta)
- 2 tablespoons extra virgin olive oil
- 1 small onion, finely diced
- 2 cloves garlic, minced
- 1/4 cup grated Parmesan cheese, plus more for serving
- 2 tablespoons fresh parsley, chopped
- Salt and freshly ground black pepper to taste
- Optional: 1/4 cup grated carrot
Instructions:
- Heat olive oil in the saucepan over medium heat. Add diced onion and cook until softened and translucent (about 5 minutes). Add minced garlic and cook for another minute until fragrant.
- Pour in the chicken broth and bring to a simmer.
- Once simmering, add the pastina pasta. Cook according to package directions (usually about 8-10 minutes), stirring occasionally, until pasta is tender.
- Remove from heat. Stir in Parmesan cheese and chopped parsley. Season with salt and pepper to taste.
- Ladle into bowls and serve immediately. Offer extra Parmesan cheese for topping.
