Ingredients:
- 1 ½ lbs ground beef (80% lean)
- 1 cup breadcrumbs (preferably plain)
- 1 medium onion, finely chopped
- 2 cloves garlic, minced
- 2 large eggs
- ½ cup milk
- 2 teaspoons Worcestershire sauce
- 1 teaspoon salt
- ½ teaspoon black pepper
- ¼ teaspoon dried thyme
- ¼ teaspoon dried oregano
- ½ cup ketchup
- 2 tablespoons brown sugar
- 1 tablespoon apple cider vinegar
- 1 teaspoon Dijon mustard
Instructions:
- Preheat the oven to 350°F (175°C).
- In a large mixing bowl, combine ground beef, breadcrumbs, chopped onion, minced garlic, eggs, milk, Worcestershire sauce, salt, pepper, thyme, and oregano. Mix until just combined; avoid over-mixing.
- Transfer the mixture to a loaf pan and shape it into a loaf.
- In a small saucepan, combine ketchup, brown sugar, apple cider vinegar, and Dijon mustard. Heat over medium heat, stirring, until the sugar dissolves; set aside.
- Spread half of the glaze over the meatloaf.
- Place the meatloaf in the preheated oven and bake for 45 minutes.
- Remove from the oven, brush with the remaining glaze, and return for an additional 15 minutes or until the internal temperature reaches 160°F (70°C).
- Allow the meatloaf to rest for 10 minutes before slicing and serving.
