Ingredients:

  • 1 ½ lbs ground beef (80% lean)
  • 1 cup breadcrumbs (preferably plain)
  • 1 medium onion, finely chopped
  • 2 cloves garlic, minced
  • 2 large eggs
  • ½ cup milk
  • 2 teaspoons Worcestershire sauce
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • ¼ teaspoon dried thyme
  • ¼ teaspoon dried oregano
  • ½ cup ketchup
  • 2 tablespoons brown sugar
  • 1 tablespoon apple cider vinegar
  • 1 teaspoon Dijon mustard

Instructions:

  1. Preheat the oven to 350°F (175°C).
  2. In a large mixing bowl, combine ground beef, breadcrumbs, chopped onion, minced garlic, eggs, milk, Worcestershire sauce, salt, pepper, thyme, and oregano. Mix until just combined; avoid over-mixing.
  3. Transfer the mixture to a loaf pan and shape it into a loaf.
  4. In a small saucepan, combine ketchup, brown sugar, apple cider vinegar, and Dijon mustard. Heat over medium heat, stirring, until the sugar dissolves; set aside.
  5. Spread half of the glaze over the meatloaf.
  6. Place the meatloaf in the preheated oven and bake for 45 minutes.
  7. Remove from the oven, brush with the remaining glaze, and return for an additional 15 minutes or until the internal temperature reaches 160°F (70°C).
  8. Allow the meatloaf to rest for 10 minutes before slicing and serving.
