Ingredients:

  • 1 cup unsalted butter, softened
  • 1 ½ cups granulated sugar
  • 2 large eggs
  • 2 ¾ cups all-purpose flour
  • 2 teaspoons cream of tartar
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • 2 tablespoons granulated sugar (for coating)
  • 2 teaspoons ground cinnamon (for coating)

Instructions:

  1. Preheat the oven to 350°F (175°C).
  2. Prepare baking sheets by lining them with parchment paper.
  3. In a large bowl, cream together the softened butter and granulated sugar until light and fluffy.
  4. Add eggs one at a time, mixing well after each addition.
  5. In a separate bowl, whisk together flour, cream of tartar, baking soda, and salt.
  6. Gradually combine dry ingredients with wet mixture until a dough forms.
  7. Chill the dough in the refrigerator for at least 30 minutes.
  8. In a small bowl, mix together the granulated sugar and ground cinnamon for coating.
  9. Using a cookie scoop or spoon, portion out the dough and roll into balls. Roll each ball in the cinnamon-sugar mixture.
  10. Place on baking sheets and gently press each ball to flatten slightly.
  11. Bake for 10-12 minutes, or until edges are set and tops are crackled.
  12. Cool on baking sheets for 5 minutes, then transfer to wire racks to cool completely.
