Ingredients:
- 1 cup unsalted butter, softened
- 1 ½ cups granulated sugar
- 2 large eggs
- 2 ¾ cups all-purpose flour
- 2 teaspoons cream of tartar
- 1 teaspoon baking soda
- ½ teaspoon salt
- 2 tablespoons granulated sugar (for coating)
- 2 teaspoons ground cinnamon (for coating)
Instructions:
- Preheat the oven to 350°F (175°C).
- Prepare baking sheets by lining them with parchment paper.
- In a large bowl, cream together the softened butter and granulated sugar until light and fluffy.
- Add eggs one at a time, mixing well after each addition.
- In a separate bowl, whisk together flour, cream of tartar, baking soda, and salt.
- Gradually combine dry ingredients with wet mixture until a dough forms.
- Chill the dough in the refrigerator for at least 30 minutes.
- In a small bowl, mix together the granulated sugar and ground cinnamon for coating.
- Using a cookie scoop or spoon, portion out the dough and roll into balls. Roll each ball in the cinnamon-sugar mixture.
- Place on baking sheets and gently press each ball to flatten slightly.
- Bake for 10-12 minutes, or until edges are set and tops are crackled.
- Cool on baking sheets for 5 minutes, then transfer to wire racks to cool completely.
