Ingredients:
- 6 cups fresh peaches, peeled and sliced
- ¾ cup granulated sugar
- 1 tsp lemon juice
- 1 tsp ground cinnamon
- 1 tbsp cornstarch
- 1 cup all-purpose flour
- ½ cup granulated sugar
- 1 tbsp baking powder
- ½ tsp salt
- 1 cup buttermilk
- ½ cup unsalted butter, melted
- 1 tsp vanilla extract
Instructions:
- Preheat your oven to 350°F (175°C).
- Peel and slice the peaches. In a large bowl, combine sliced peaches, sugar, lemon juice, cinnamon, and cornstarch. Toss to coat and set aside.
- In another bowl, whisk together flour, sugar, baking powder, and salt. Stir in buttermilk, melted butter, and vanilla extract until just combined.
- Pour the peach mixture into the greased baking dish, spreading it evenly. Spoon the dough mixture over the peaches in dollops, leaving some gaps.
- Bake in the preheated oven for 35-40 minutes or until the top is golden brown and a toothpick inserted comes out clean.
- Let the cobbler cool for about 10 minutes before serving. Its delicious warm or at room temperature.
