Ingredients:

  • 6 cups fresh peaches, peeled and sliced
  • ¾ cup granulated sugar
  • 1 tsp lemon juice
  • 1 tsp ground cinnamon
  • 1 tbsp cornstarch
  • 1 cup all-purpose flour
  • ½ cup granulated sugar
  • 1 tbsp baking powder
  • ½ tsp salt
  • 1 cup buttermilk
  • ½ cup unsalted butter, melted
  • 1 tsp vanilla extract

Instructions:

  1. Preheat your oven to 350°F (175°C).
  2. Peel and slice the peaches. In a large bowl, combine sliced peaches, sugar, lemon juice, cinnamon, and cornstarch. Toss to coat and set aside.
  3. In another bowl, whisk together flour, sugar, baking powder, and salt. Stir in buttermilk, melted butter, and vanilla extract until just combined.
  4. Pour the peach mixture into the greased baking dish, spreading it evenly. Spoon the dough mixture over the peaches in dollops, leaving some gaps.
  5. Bake in the preheated oven for 35-40 minutes or until the top is golden brown and a toothpick inserted comes out clean.
  6. Let the cobbler cool for about 10 minutes before serving. Its delicious warm or at room temperature.
