Ingredients:

  • 1 large English cucumber (300g), thinly sliced
  • 16 ounces cottage cheese
  • 1/4 cup sour cream
  • 1/4 cup fresh dill, chopped
  • 1/4 cup fresh chives, chopped
  • 2 tablespoons white wine vinegar
  • 1 tablespoon olive oil
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 small red onion (optional)

Instructions:

  1. Thinly slice the cucumber, lightly salt, and let sit for 5 minutes. Pat dry with paper towels.
  2. In a bowl, combine cottage cheese, sour cream, dill, chives, vinegar, olive oil, salt, pepper, and red onion (if using).
  3. Gently fold in the sliced cucumber.
  4. Cover and refrigerate for 15 minutes (optional).
