Ingredients:
- 1 large English cucumber (300g), thinly sliced
- 16 ounces cottage cheese
- 1/4 cup sour cream
- 1/4 cup fresh dill, chopped
- 1/4 cup fresh chives, chopped
- 2 tablespoons white wine vinegar
- 1 tablespoon olive oil
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 small red onion (optional)
Instructions:
- Thinly slice the cucumber, lightly salt, and let sit for 5 minutes. Pat dry with paper towels.
- In a bowl, combine cottage cheese, sour cream, dill, chives, vinegar, olive oil, salt, pepper, and red onion (if using).
- Gently fold in the sliced cucumber.
- Cover and refrigerate for 15 minutes (optional).
