Ingredients:
- 8 oz (225g) full-fat brick cream cheese, softened to room temperature
- 2 tbsp (30g) powdered sugar
- 1 tsp (5ml) vanilla extract
- 1/4 tsp (1.5g) ground cinnamon
- 3 large eggs
- 1/2 cup (120ml) whole milk
- 1 tsp (2g) ground cinnamon
- 1/4 tsp (1.5g) salt
- 8 thick slices Brioche or Challah bread
- 3 tbsp (42g) unsalted butter
Instructions:
- In a medium bowl, beat the softened cream cheese, powdered sugar, vanilla, and cinnamon until smooth and aerated.
- Spread a generous layer of the cream cheese mixture onto 4 slices of bread. Top with the remaining 4 slices to create sandwiches. Firmly press the edges of the bread together with your fingers to seal the filling inside.
- Whisk the eggs, milk, cinnamon, and salt in a shallow dish. Dip each sandwich into the batter for about 10–15 seconds per side.
- Melt butter in a skillet over medium heat. Fry the sandwiches for 3–4 minutes per side until a mahogany-colored, caramelized exterior forms and the center feels slightly firm.
