Ingredients:

  • 1.5 lbs (680g) boneless, skinless chicken breasts, cut into 1-inch pieces
  • 2 tablespoons (30 ml) olive oil
  • 2 tablespoons (30g) Cajun seasoning
  • 1 teaspoon (5ml) garlic powder
  • 1/2 teaspoon (2.5ml) onion powder
  • Salt and freshly ground black pepper to taste
  • 1 lb (450g) pasta (penne, fettuccine, or your favourite shape)
  • 4 tablespoons (56g) unsalted butter
  • 1 small yellow onion, finely diced
  • 2 cloves garlic, minced
  • 1 green bell pepper, diced
  • 1 red bell pepper, diced
  • 1/2 cup (120ml) chicken broth
  • 1 cup (240ml) heavy cream
  • 1/2 cup (120ml) grated Parmesan cheese
  • 1/4 cup (60ml) chopped fresh parsley
  • Salt and freshly ground black pepper to taste

Instructions:

  1. Combine chicken with olive oil, Cajun seasoning, garlic powder, onion powder, salt, and pepper. Mix well to coat.
  2. Cook pasta according to package directions until al dente. Drain and set aside.
  3. In the large skillet, sauté the chicken over medium-high heat until cooked through and lightly browned. Remove from skillet and set aside.
  4. Add butter to the skillet. Sauté onion and garlic until softened. Add bell peppers and cook until slightly tender.
  5. Pour in chicken broth and scrape up any browned bits from the bottom of the skillet. Add heavy cream and Parmesan cheese. Simmer until the sauce thickens slightly.
  6. Add the cooked chicken and pasta to the sauce. Toss to coat.
  7. Garnish with fresh parsley. Serve immediately.
