Ingredients:
- 1.5 lbs (680g) boneless, skinless chicken breasts, cut into 1-inch pieces
- 2 tablespoons (30 ml) olive oil
- 2 tablespoons (30g) Cajun seasoning
- 1 teaspoon (5ml) garlic powder
- 1/2 teaspoon (2.5ml) onion powder
- Salt and freshly ground black pepper to taste
- 1 lb (450g) pasta (penne, fettuccine, or your favourite shape)
- 4 tablespoons (56g) unsalted butter
- 1 small yellow onion, finely diced
- 2 cloves garlic, minced
- 1 green bell pepper, diced
- 1 red bell pepper, diced
- 1/2 cup (120ml) chicken broth
- 1 cup (240ml) heavy cream
- 1/2 cup (120ml) grated Parmesan cheese
- 1/4 cup (60ml) chopped fresh parsley
- Salt and freshly ground black pepper to taste
Instructions:
- Combine chicken with olive oil, Cajun seasoning, garlic powder, onion powder, salt, and pepper. Mix well to coat.
- Cook pasta according to package directions until al dente. Drain and set aside.
- In the large skillet, sauté the chicken over medium-high heat until cooked through and lightly browned. Remove from skillet and set aside.
- Add butter to the skillet. Sauté onion and garlic until softened. Add bell peppers and cook until slightly tender.
- Pour in chicken broth and scrape up any browned bits from the bottom of the skillet. Add heavy cream and Parmesan cheese. Simmer until the sauce thickens slightly.
- Add the cooked chicken and pasta to the sauce. Toss to coat.
- Garnish with fresh parsley. Serve immediately.
