Ingredients:

  • 1 cup Rolled Oats (Old-fashioned or jumbo oats)
  • 2 tablespoons Chia Seeds (Whole seeds, essential for thickening)
  • 1/8 teaspoon Fine Sea Salt
  • 1 ½ cups Milk (Dairy or Non-dairy)
  • 4 tablespoons Natural Peanut Butter (Smooth style is best)
  • 4 teaspoons Unsweetened Cocoa Powder (Dutch process recommended)
  • 2 tablespoons Maple Syrup (or equivalent sweetener)
  • ½ teaspoon Vanilla Extract (Pure extract)

Instructions:

  1. In a medium mixing bowl, combine the peanut butter, maple syrup, unsweetened cocoa powder, and vanilla extract. Whisk or stir vigorously until a thick, uniform chocolate peanut butter paste forms. (Tip: If the peanut butter is stiff, microwave for 10-15 seconds to soften it first.)
  2. Pour the 1 ½ cups of milk into the flavour paste. Whisk thoroughly until the paste is completely dissolved and the liquid is a smooth, chocolate-milk colour.
  3. Add the rolled oats, chia seeds, and the pinch of sea salt to the liquid mixture. Stir well with a spoon or spatula for 30–60 seconds, ensuring the oats and chia seeds are fully submerged.
  4. Divide the mixture evenly between your two airtight containers or jars (16 oz capacity recommended). Cover the containers tightly and refrigerate for a minimum of 6 hours, or preferably overnight (up to 4 days).
  5. The next morning, check the consistency. If it is too thick, add a splash (1-2 tablespoons) of milk or water and stir. Top with your chosen ingredients (such as chopped peanuts, fresh raspberries, or banana slices) and serve cold.
