Ingredients:
- 1 cup Rolled Oats (Old-fashioned or jumbo oats)
- 2 tablespoons Chia Seeds (Whole seeds, essential for thickening)
- 1/8 teaspoon Fine Sea Salt
- 1 ½ cups Milk (Dairy or Non-dairy)
- 4 tablespoons Natural Peanut Butter (Smooth style is best)
- 4 teaspoons Unsweetened Cocoa Powder (Dutch process recommended)
- 2 tablespoons Maple Syrup (or equivalent sweetener)
- ½ teaspoon Vanilla Extract (Pure extract)
Instructions:
- In a medium mixing bowl, combine the peanut butter, maple syrup, unsweetened cocoa powder, and vanilla extract. Whisk or stir vigorously until a thick, uniform chocolate peanut butter paste forms. (Tip: If the peanut butter is stiff, microwave for 10-15 seconds to soften it first.)
- Pour the 1 ½ cups of milk into the flavour paste. Whisk thoroughly until the paste is completely dissolved and the liquid is a smooth, chocolate-milk colour.
- Add the rolled oats, chia seeds, and the pinch of sea salt to the liquid mixture. Stir well with a spoon or spatula for 30–60 seconds, ensuring the oats and chia seeds are fully submerged.
- Divide the mixture evenly between your two airtight containers or jars (16 oz capacity recommended). Cover the containers tightly and refrigerate for a minimum of 6 hours, or preferably overnight (up to 4 days).
- The next morning, check the consistency. If it is too thick, add a splash (1-2 tablespoons) of milk or water and stir. Top with your chosen ingredients (such as chopped peanuts, fresh raspberries, or banana slices) and serve cold.
