Ingredients:
- 2 tablespoons unsalted butter
- 1 medium onion, finely chopped
- 2 cloves garlic, minced
- 2 medium potatoes, diced
- 2 cups clam juice
- 1 can (10 oz) chopped clams, drained
- 1 cup heavy cream
- Salt and black pepper, to taste
- Fresh parsley, chopped, for garnish
Instructions:
- Melt butter in a large pot over medium heat.
- Add chopped onion and sauté until translucent, about 5 minutes.
- Stir in minced garlic and cook for an additional 1 minute.
- Add diced potatoes to the pot.
- Pour in clam juice and bring to a simmer.
- Cook until potatoes are tender, about 10-15 minutes.
- Stir in the drained clams and heavy cream.
- Season with salt and black pepper to taste.
- Cook for an additional 2-3 minutes until heated through.
- Garnish with chopped parsley before serving.
