Ingredients:

  • 2 tablespoons unsalted butter
  • 1 medium onion, finely chopped
  • 2 cloves garlic, minced
  • 2 medium potatoes, diced
  • 2 cups clam juice
  • 1 can (10 oz) chopped clams, drained
  • 1 cup heavy cream
  • Salt and black pepper, to taste
  • Fresh parsley, chopped, for garnish

Instructions:

  1. Melt butter in a large pot over medium heat.
  2. Add chopped onion and sauté until translucent, about 5 minutes.
  3. Stir in minced garlic and cook for an additional 1 minute.
  4. Add diced potatoes to the pot.
  5. Pour in clam juice and bring to a simmer.
  6. Cook until potatoes are tender, about 10-15 minutes.
  7. Stir in the drained clams and heavy cream.
  8. Season with salt and black pepper to taste.
  9. Cook for an additional 2-3 minutes until heated through.
  10. Garnish with chopped parsley before serving.
