Ingredients:
- 2 lbs boneless, skinless chicken thighs
- 8 oz full-fat cream cheese, cubed
- 1 packet (28g) ranch seasoning mix
- 1/4 cup chicken bone broth
- 1/2 lb thick-cut bacon, cooked and crumbled
- 2 cups shredded Colby-Jack cheese
- 1/2 cup fresh scallions, finely sliced
- 1 tsp smoked paprika
- 12 small flour tortillas
- 2 tbsp neutral oil
Instructions:
- Layer the slow cooker. Place 2 lbs chicken thighs in the bottom. Top with 8 oz cubed cream cheese, 28g ranch seasoning, and 1 tsp smoked paprika.
- Add the liquid. Pour 1/4 cup chicken bone broth around the edges of the chicken. Note: Pouring around the edges keeps the seasoning on the meat rather than washing it off.
- Braise the meat. Cover and cook on High for 240 minutes. Wait until the chicken is tender and easy to shred.
- Shred the chicken. Transfer the chicken to a large bowl. Use two forks to pull the meat into small, bite-sized shreds.
- Incorporate the cream. Return the shredded chicken to the slow cooker. Stir vigorously into the melted cheese and juices until the mixture looks velvety and integrated.
- Add the mix ins. Fold in 1/4 lb of the cooked bacon and 1/4 cup of the sliced scallions.
- Prepare for baking. Preheat your oven to 425°F (220°C). Spray a rimmed baking sheet with 2 tbsp neutral oil.
- Fill the tortillas. Lay out 12 flour tortillas. Portion the chicken mixture into the center of each.
- Add the topping. Sprinkle the remaining 2 cups Colby Jack cheese and 1/4 lb bacon over the chicken.
- Crisp the tacos. Bake for 5 to 8 minutes until the tortilla edges are golden brown and crackling. Sprinkle with remaining scallions before serving.
