Ingredients:
- 1 tablespoon olive oil (15 ml)
- 2 cloves garlic, minced (about 1 teaspoon)
- 1/2 cup vegetable broth (120 ml)
- 1/2 cup heavy cream (120 ml)
- 1/2 teaspoon salt (3g)
- 1/4 teaspoon black pepper (1.5g)
- 1/4 teaspoon red pepper flakes (1.5g) (optional)
- 1/2 cup prepared basil pesto (120 ml)
- 1/4 cup grated Parmesan cheese, plus more for serving (25g)
Instructions:
- Heat olive oil in a medium saucepan over medium heat. Add minced garlic and sauté for about 1 minute, until fragrant but not browned.
- Add vegetable broth, heavy cream, salt, and pepper to the saucepan.
- Bring the mixture to a simmer, then reduce heat to low. Simmer for 5 minutes, stirring occasionally, until slightly thickened.
- Remove the saucepan from the heat. Stir in the basil pesto and Parmesan cheese until well combined and the cheese is melted.
- Taste the sauce and adjust seasoning as needed. Add more salt, pepper, or Parmesan cheese to taste.
- Serve immediately over your favorite pasta, vegetables, or protein. Garnish with extra Parmesan cheese and fresh basil leaves, if desired.
