Ingredients:

  • 1 tablespoon olive oil (15 ml)
  • 2 cloves garlic, minced (about 1 teaspoon)
  • 1/2 cup vegetable broth (120 ml)
  • 1/2 cup heavy cream (120 ml)
  • 1/2 teaspoon salt (3g)
  • 1/4 teaspoon black pepper (1.5g)
  • 1/4 teaspoon red pepper flakes (1.5g) (optional)
  • 1/2 cup prepared basil pesto (120 ml)
  • 1/4 cup grated Parmesan cheese, plus more for serving (25g)

Instructions:

  1. Heat olive oil in a medium saucepan over medium heat. Add minced garlic and sauté for about 1 minute, until fragrant but not browned.
  2. Add vegetable broth, heavy cream, salt, and pepper to the saucepan.
  3. Bring the mixture to a simmer, then reduce heat to low. Simmer for 5 minutes, stirring occasionally, until slightly thickened.
  4. Remove the saucepan from the heat. Stir in the basil pesto and Parmesan cheese until well combined and the cheese is melted.
  5. Taste the sauce and adjust seasoning as needed. Add more salt, pepper, or Parmesan cheese to taste.
  6. Serve immediately over your favorite pasta, vegetables, or protein. Garnish with extra Parmesan cheese and fresh basil leaves, if desired.
