Ingredients:

  • 4 slices of deli turkey or ham (thick cut preferred; approx. 100g)
  • 4 large spinach leaves or romaine lettuce leaves
  • ½ cup (75g) bell peppers, thinly sliced (any color)
  • ½ cup (75g) cucumber, thinly sliced
  • 4 tablespoons (60g) cream cheese or hummus
  • 4 slices of cheese (Swiss or cheddar; approx. 100g)
  • ¼ cup (30g) shredded carrots
  • ¼ cup (30g) sliced olives
  • ¼ teaspoon garlic powder or onion powder

Instructions:

  1. Wash and dry spinach or lettuce leaves. Slice bell peppers, cucumber, and any additional veggies for filling.
  2. In a small bowl, combine cream cheese or hummus with optional garlic or onion powder until smooth.
  3. Lay a slice of lunch meat on a flat surface. Spread 1 tablespoon of the cream cheese or hummus evenly over the meat. Layer one spinach leaf, followed by a slice of cheese, and top with bell peppers and cucumbers.
  4. Starting from one end, carefully roll the lunch meat tightly around the filling. Secure with a toothpick if necessary, or wrap in plastic wrap if saving for later.
  5. Cut each roll-up in half or into pinwheels for a bite-sized treat. Enjoy fresh!
