Ingredients:
- 1 medium carrot, peeled and grated (approx. 100g / ½ cup)
- 1 medium zucchini, grated (approx. 150g / ¾ cup)
- 1/2 red bell pepper, finely chopped (approx. 75g / ⅓ cup)
- 1/2 cup frozen peas, thawed (approx. 70g)
- 1/4 cup red onion, finely chopped (approx. 40g)
- 1 large egg
- 1/4 cup grated Parmesan cheese (approx. 25g)
- 1/4 cup all-purpose flour (30g), plus extra for dusting
- 1 tablespoon olive oil
- 1/2 teaspoon baking powder
- 1/4 teaspoon garlic powder
- Salt and black pepper to taste
Instructions:
- Grate the carrot and zucchini. Chop the bell pepper and red onion. Thaw the peas.
- In a large bowl, combine the grated carrot, zucchini, chopped bell pepper, peas, and red onion.
- Add the egg and olive oil to the vegetable mixture. Stir to combine.
- Add the Parmesan cheese, flour, baking powder, garlic powder, salt, and pepper. Mix until just combined; do not overmix.
- Using your hands or a spoon, form the mixture into small, flattened patties (about 2 inches in diameter).
- Place the fritters on a baking sheet lined with parchment paper. Bake in a preheated oven at 400°F (200°C) for 20-25 minutes, or until golden brown and cooked through. Flip halfway through for even browning.
- Let the fritters cool slightly on the baking sheet before serving.
