Ingredients:

  • 1 medium carrot, peeled and grated (approx. 100g / ½ cup)
  • 1 medium zucchini, grated (approx. 150g / ¾ cup)
  • 1/2 red bell pepper, finely chopped (approx. 75g / ⅓ cup)
  • 1/2 cup frozen peas, thawed (approx. 70g)
  • 1/4 cup red onion, finely chopped (approx. 40g)
  • 1 large egg
  • 1/4 cup grated Parmesan cheese (approx. 25g)
  • 1/4 cup all-purpose flour (30g), plus extra for dusting
  • 1 tablespoon olive oil
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon garlic powder
  • Salt and black pepper to taste

Instructions:

  1. Grate the carrot and zucchini. Chop the bell pepper and red onion. Thaw the peas.
  2. In a large bowl, combine the grated carrot, zucchini, chopped bell pepper, peas, and red onion.
  3. Add the egg and olive oil to the vegetable mixture. Stir to combine.
  4. Add the Parmesan cheese, flour, baking powder, garlic powder, salt, and pepper. Mix until just combined; do not overmix.
  5. Using your hands or a spoon, form the mixture into small, flattened patties (about 2 inches in diameter).
  6. Place the fritters on a baking sheet lined with parchment paper. Bake in a preheated oven at 400°F (200°C) for 20-25 minutes, or until golden brown and cooked through. Flip halfway through for even browning.
  7. Let the fritters cool slightly on the baking sheet before serving.
