Ingredients:
- 2 cups all-purpose flour
- ½ cup granulated sugar
- ½ teaspoon salt
- ½ teaspoon baking powder
- ¾ cup unsalted butter, cold and diced
- 1 large egg, beaten
- 1 cup ricotta cheese, strained
- ½ cup powdered sugar
- 1 teaspoon vanilla extract
- 1 tablespoon orange zest
- ¼ cup mini chocolate chips
Instructions:
- In a mixing bowl, combine flour, sugar, salt, and baking powder.
- Cut in cold butter using a fork or pastry cutter until mixture resembles coarse crumbs.
- Add beaten egg and mix until dough forms a ball; chill for 30 minutes.
- In a separate bowl, combine strained ricotta cheese, powdered sugar, vanilla, and orange zest.
- Fold in mini chocolate chips until evenly distributed.
- Preheat the oven to 350°F (175°C).
- On a lightly floured surface, roll out the chilled dough to ¼ inch thickness.
- Use the cookie cutter to cut out circles and place them on a baking sheet lined with parchment paper.
- Bake for 12-15 minutes, until edges are lightly golden.
- Remove from the oven and let cool completely on a wire rack.
- Once cooled, fill a piping bag (or use a spoon) to pipe the filling into the center of half the cookie rounds.
- Top each filled cookie with another round to create a sandwich.
- Dust cookies with additional powdered sugar if desired.
- Enjoy immediately or store in an airtight container for up to 3 days.
