Ingredients:

  • 2 cups all-purpose flour
  • ½ cup granulated sugar
  • ½ teaspoon salt
  • ½ teaspoon baking powder
  • ¾ cup unsalted butter, cold and diced
  • 1 large egg, beaten
  • 1 cup ricotta cheese, strained
  • ½ cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1 tablespoon orange zest
  • ¼ cup mini chocolate chips

Instructions:

  1. In a mixing bowl, combine flour, sugar, salt, and baking powder.
  2. Cut in cold butter using a fork or pastry cutter until mixture resembles coarse crumbs.
  3. Add beaten egg and mix until dough forms a ball; chill for 30 minutes.
  4. In a separate bowl, combine strained ricotta cheese, powdered sugar, vanilla, and orange zest.
  5. Fold in mini chocolate chips until evenly distributed.
  6. Preheat the oven to 350°F (175°C).
  7. On a lightly floured surface, roll out the chilled dough to ¼ inch thickness.
  8. Use the cookie cutter to cut out circles and place them on a baking sheet lined with parchment paper.
  9. Bake for 12-15 minutes, until edges are lightly golden.
  10. Remove from the oven and let cool completely on a wire rack.
  11. Once cooled, fill a piping bag (or use a spoon) to pipe the filling into the center of half the cookie rounds.
  12. Top each filled cookie with another round to create a sandwich.
  13. Dust cookies with additional powdered sugar if desired.
  14. Enjoy immediately or store in an airtight container for up to 3 days.
