  • 1 ¼ teaspoons baking powder

  • ¼ teaspoon paprika (optional)
  • 1 ½ cups (360ml) cold water (use club soda or beer for added crispiness)

Instructions:

  1. In a large mixing bowl, whisk together the flour, cornstarch, baking powder, salt, sugar, and paprika until fully combined.
  2. Gradually pour in the cold water while whisking continuously to create a smooth batter free of lumps.
  3. Preheat oil in a deep fryer or a large pot to 350°F (175°C).
  4. Dip your choice of fish, shrimp, or chicken pieces into the batter, ensuring each piece is well-coated.
  5. Carefully lower the coated food items into the hot oil and fry for 3-5 minutes or until golden brown and crispy.
  6. Remove the battered food with a slotted spoon and drain on paper towels. Serve immediately with your favorite dipping sauce.
