Ingredients:
- 2 lbs (900g) Sweet Potatoes (large, orange flesh), scrubbed clean
- Cold Water (As needed, for soaking)
- 2 tbsp Cornflour (Cornstarch)
- 3 tbsp High-Heat Neutral Oil (e.g., Avocado, refined Coconut, or Canola oil)
- 1 tsp Fine Sea Salt
- 1/2 tsp Freshly Ground Black Pepper
- 1 tsp Smoked Paprika
- 1/2 tsp Garlic Powder
- 1/4 tsp Cayenne Pepper (Optional)
Instructions:
- Cut Uniform Sticks: Peel (optional) and slice the sweet potatoes into uniform sticks, roughly 1/4 to 1/3 inch (6-8 mm) thick. Uniformity is the secret to even cooking.
- The Essential Soak: Transfer the cut potatoes to a large bowl and cover completely with very cold water. Let them soak for a minimum of 30 minutes (up to 2 hours is fine). This draws out excess surface starch, which causes sogginess.
- Preheat Oven: While soaking, preheat your oven to a high temperature: 425°F (220°C). Line two large rimmed baking sheets with parchment paper.
- Dry Thoroughly: Drain the fries and spread them out over several clean, dry kitchen towels. Pat them vigorously until they are absolutely bone dry. Any remaining moisture prevents crisping.
- The Starch Dust: Place the dried fries in a clean, large bowl. Sprinkle evenly with the cornflour (cornstarch) and toss thoroughly until every chip is lightly dusted. This creates a crust.
- Oil and Season: Drizzle the oil over the fries, tossing until they are lightly and evenly coated. Add the salt, pepper, smoked paprika, garlic powder, and cayenne (if using). Toss once more until the seasoning is fully distributed.
- Arrange (Do Not Crowd!): Spread the seasoned fries onto the prepared baking sheets in a single, uncrowded layer. If they touch, they will steam. Use two sheets if necessary.
- Initial Bake: Place the trays in the preheated oven. Bake for 15 minutes.
- The Flip: After 15 minutes, remove the trays and use a spatula to flip the fries so they can brown evenly on the other side.
- Finish Baking: Return to the oven for another 10–15 minutes, or until deeply golden brown and crispy at the edges.
- Serve Immediately: Remove from the oven. Add a final small sprinkle of salt if needed. Serve piping hot with your favorite dip.
