  • 1.5 lbs sweet potatoes, peeled and cut into 1 inch cubes
  • 2 Tbsp high heat oil (Avocado or Olive)
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tsp spice blend (e.g., Smoked Paprika, Chili Powder)

Instructions:

  1. Preheat the oven to 400°F (200°C). Line a large sheet pan with parchment paper or foil for easier cleanup.
  2. Dice the sweet potatoes into uniform 1-inch cubes. Uniformity is critical for even roasting and crispness.
  3. In a large bowl, toss the cubed sweet potatoes with 2 Tbsp of high heat oil, 1 tsp salt, 1/2 tsp black pepper, and 1 tsp spice blend until every cube is evenly coated.
  4. Spread the potatoes in a single layer on the prepared sheet pan, ensuring significant space between cubes. Avoid overcrowding the pan, as this causes steaming instead of roasting.
  5. Roast for 30 minutes, flipping or stirring the potatoes halfway through (at the 15-minute mark), until the edges are dark golden brown, caramelized, and crispy.
