Ingredients:

  • 2 lbs fresh green beans, trimmed and snapped
  • 1 medium yellow onion, diced
  • 3 cloves garlic, minced
  • 1 tsp cracked black pepper
  • 1 lb smoked ham hock
  • 2 cups low-sodium chicken broth
  • 2 tbsp unsalted butter, cubed
  • 1 tsp salt

Instructions:

  1. Trim the stem ends off the fresh green beans.
  2. Place the diced onion and minced garlic at the bottom of the slow cooker insert to create a flavor bed.
  3. Pile the green beans on top of the aromatics.
  4. Nestle the ham hock among the beans to ensure the smoky fat renders into the vegetables.
  5. Pour the chicken broth over the top and scatter the butter cubes, salt, and pepper across the surface.
  6. Cover with a tight-fitting lid and set the Crock Pot to Low for 8 hours or High for 4-5 hours.
  7. Cook until the beans have shifted to a muted olive hue and can be easily pierced with a fork.
