Ingredients:
- 2 lbs fresh green beans, trimmed and snapped
- 1 medium yellow onion, diced
- 3 cloves garlic, minced
- 1 tsp cracked black pepper
- 1 lb smoked ham hock
- 2 cups low-sodium chicken broth
- 2 tbsp unsalted butter, cubed
- 1 tsp salt
Instructions:
- Trim the stem ends off the fresh green beans.
- Place the diced onion and minced garlic at the bottom of the slow cooker insert to create a flavor bed.
- Pile the green beans on top of the aromatics.
- Nestle the ham hock among the beans to ensure the smoky fat renders into the vegetables.
- Pour the chicken broth over the top and scatter the butter cubes, salt, and pepper across the surface.
- Cover with a tight-fitting lid and set the Crock Pot to Low for 8 hours or High for 4-5 hours.
- Cook until the beans have shifted to a muted olive hue and can be easily pierced with a fork.
