Ingredients:

  • 1.5 lbs smoked kielbasa, sliced into 1/2-inch rounds
  • 1.5 lbs fresh green beans, trimmed and snapped
  • 1.5 lbs baby red potatoes, halved
  • 1 large yellow onion, thickly sliced
  • 3 cloves garlic, minced
  • 1 cup low sodium chicken broth

Instructions:

  1. Sear the sausage. Heat a large cast iron skillet over medium high heat. Add the 1.5 lbs of sliced kielbasa rounds and sear until a dark, mahogany crust develops on both sides, which usually takes about 3 minutes per side. Note: This step is non negotiable for deep flavor.
  2. Sauté the aromatics. Remove the seared sausage and set it aside. In that same skillet with the rendered fat, add the thickly sliced yellow onions. Cook for 2 minutes, using a wooden spoon to scrape up any browned bits from the bottom.
  3. Add the garlic. Stir in the 3 cloves of minced garlic and cook for exactly 30 seconds until the scent fills your kitchen. Do not let the garlic brown, or it will turn bitter.
  4. Foundation layer. Place the 1.5 lbs of halved baby red potatoes at the very bottom of the 6 quart slow cooker. Arrange them in a flat layer to ensure they have the best contact with the heat source.
  5. Protein layer. Top the potatoes with the seared kielbasa and the sautéed onion and garlic mixture.
  6. Vegetable layer. Spread the 1.5 lbs of fresh snapped green beans over the top of the meat layer.
  7. Whisk the sauce. In a small bowl, whisk together the 1 cup of chicken broth, 2 tbsp of apple cider vinegar, 1 tsp smoked paprika, 0.5 tsp pepper, and 0.5 tsp dried thyme.
  8. The pour. Slowly pour the liquid mixture over the ingredients in the crockpot, ensuring it trickles down through the layers.
  9. Slow cook. Cover the pot and cook on High for 4 hours. Check the potatoes with a fork; they should be soft and yielding but not falling apart.
  10. Rest and serve. Turn off the heat and let the dish sit for 5 minutes with the lid slightly ajar.
