Ingredients:
- 3 cups rolled oats (240g)
- 1 cup mixed nuts, chopped (150g)
- 1 cup sticky sweetener (honey or maple syrup) (240ml)
- 1/2 cup nut butter (e.g., almond or peanut butter) (120g)
- 1/2 cup shredded coconut (unsweetened) (40g)
- 1/2 teaspoon salt (3g)
- 1 teaspoon vanilla extract (5ml)
- 1 teaspoon cinnamon (optional) (2g)
- 1/2 cup dried fruits (raisins, cranberries, etc.) (75g)
- 1/2 cup chocolate chips (optional) (90g)
Instructions:
- Preheat your oven to 350°F (175°C).
- In a large mixing bowl, stir together the rolled oats, chopped nuts, shredded coconut, salt, and cinnamon (if using).
- In a separate bowl, whisk together the honey (or maple syrup) and nut butter until well combined. Stir in the vanilla extract.
- Pour the wet mixture over the dry ingredients and stir until everything is evenly coated.
- Spread the mixture evenly onto a lined baking sheet and bake for 20-25 minutes, stirring halfway through, until golden brown.
- Remove from the oven and let cool completely on the baking sheet to allow clusters to form.
- Once cooled, break into clusters and store in an airtight container.
