Ingredients:

  • 3 cups rolled oats (240g)
  • 1 cup mixed nuts, chopped (150g)
  • 1 cup sticky sweetener (honey or maple syrup) (240ml)
  • 1/2 cup nut butter (e.g., almond or peanut butter) (120g)
  • 1/2 cup shredded coconut (unsweetened) (40g)
  • 1/2 teaspoon salt (3g)
  • 1 teaspoon vanilla extract (5ml)
  • 1 teaspoon cinnamon (optional) (2g)
  • 1/2 cup dried fruits (raisins, cranberries, etc.) (75g)
  • 1/2 cup chocolate chips (optional) (90g)

Instructions:

  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, stir together the rolled oats, chopped nuts, shredded coconut, salt, and cinnamon (if using).
  3. In a separate bowl, whisk together the honey (or maple syrup) and nut butter until well combined. Stir in the vanilla extract.
  4. Pour the wet mixture over the dry ingredients and stir until everything is evenly coated.
  5. Spread the mixture evenly onto a lined baking sheet and bake for 20-25 minutes, stirring halfway through, until golden brown.
  6. Remove from the oven and let cool completely on the baking sheet to allow clusters to form.
  7. Once cooled, break into clusters and store in an airtight container.
