Ingredients:
- 2 large English Cucumbers (approx. 600g), unpeeled and sliced thin
- 0.5 medium Red Onion (approx. 100g), shaved into half-moons
- 1 tsp Kosher Salt
- 0.25 cup Rice Vinegar
- 2 tbsp Apple Cider Vinegar
- 1 tbsp Granulated Sugar
- 0.5 tsp Black Pepper, freshly cracked
- 2 tbsp Fresh Dill, roughly chopped
- 0.5 tsp Red Pepper Flakes
Instructions:
- Use a mandoline or sharp knife to create uniform 3mm rounds.
- Toss cucumbers with 1 tsp Kosher salt in a colander.
- Sit the colander over a bowl for 10 minutes until the slices feel slightly flexible.
- Shave 100g Red Onion into thin half moons and set aside.
- Combine 0.25 cup rice vinegar, 2 tbsp apple cider vinegar, 1 tbsp sugar, and black pepper.
- Use a clean kitchen towel to firmly press the cucumbers until no visible moisture remains.
- Place cucumbers and onions in a large bowl.
- Sprinkle 2 tbsp fresh dill and 0.5 tsp red pepper flakes over the vegetables.
- Pour the dressing over and toss gently until every slice is glistening and coated.
- Let it sit in the fridge for 15 minutes before serving for the best flavor meld.
