Ingredients:

  • 2 large English Cucumbers (approx. 600g), unpeeled and sliced thin
  • 0.5 medium Red Onion (approx. 100g), shaved into half-moons
  • 1 tsp Kosher Salt
  • 0.25 cup Rice Vinegar
  • 2 tbsp Apple Cider Vinegar
  • 1 tbsp Granulated Sugar
  • 0.5 tsp Black Pepper, freshly cracked
  • 2 tbsp Fresh Dill, roughly chopped
  • 0.5 tsp Red Pepper Flakes

Instructions:

  1. Use a mandoline or sharp knife to create uniform 3mm rounds.
  2. Toss cucumbers with 1 tsp Kosher salt in a colander.
  3. Sit the colander over a bowl for 10 minutes until the slices feel slightly flexible.
  4. Shave 100g Red Onion into thin half moons and set aside.
  5. Combine 0.25 cup rice vinegar, 2 tbsp apple cider vinegar, 1 tbsp sugar, and black pepper.
  6. Use a clean kitchen towel to firmly press the cucumbers until no visible moisture remains.
  7. Place cucumbers and onions in a large bowl.
  8. Sprinkle 2 tbsp fresh dill and 0.5 tsp red pepper flakes over the vegetables.
  9. Pour the dressing over and toss gently until every slice is glistening and coated.
  10. Let it sit in the fridge for 15 minutes before serving for the best flavor meld.
