Ingredients:

  • ½ cup (115g) unsalted butter, plus extra for greasing
  • 1 cup (200g) granulated sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • ½ cup (65g) all-purpose flour
  • ⅓ cup (40g) unsweetened cocoa powder
  • ¼ tsp salt
  • ½ tsp baking powder
  • ½ cup (90g) white chocolate chips, plus a few extra for garnish

Instructions:

  1. Preheat the oven to 350°F (175°C) and grease the baking pan or line it with parchment paper.
  2. In a microwave-safe bowl, melt the unsalted butter until completely liquefied.
  3. Stir in granulated sugar until combined. Add eggs one at a time, mixing well after each addition. Stir in vanilla extract.
  4. Sift in flour, cocoa powder, salt, and baking powder; mix until just combined.
  5. In another bowl, melt the white chocolate chips until smooth, either in a microwave or double boiler.
  6. Pour half of the brownie batter into the prepared pan, followed by dollops of the melted white chocolate. Repeat with the remaining brownie batter, and top with extra white chocolate chips.
  7. Use a knife to gently swirl the batters together to create a marbled effect.
  8. Bake in the preheated oven for 25-30 minutes, or until a toothpick inserted in the center comes out with a few moist crumbs.
  9. Allow to cool completely in the pan before cutting into squares.
