Ingredients:

  • 3 ½ cups (440 g) powdered sugar
  • 1/2 cup (50 g) unsweetened cocoa powder
  • 1/4 cup (60 ml) heavy cream or milk
  • 1 teaspoon vanilla extract
  • Optional: a pinch of salt to taste

Instructions:

  1. Gather all ingredients at room temperature.
  2. Using a sifter, sift together the powdered sugar and cocoa powder in a bowl to avoid lumps.
  3. In a mixing bowl, beat the softened butter with an electric mixer on medium speed until smooth and creamy (about 2 minutes).
  4. Gradually add the sifted sugar and cocoa mixture to the creamed butter, mixing on low speed to prevent a sugar cloud.
  5. Add heavy cream and vanilla extract. Beat until the mixture is light and fluffy (about 3-5 minutes).
  6. Add a pinch of salt to enhance flavor if desired; beat again briefly.
  7. For easier spreading or piping, chill in the refrigerator for 15 minutes.
  8. Apply immediately or store in an airtight container in the fridge; re-whip before using.
