Ingredients:
- 1 ½ cups all-purpose flour
- 1 cup granulated sugar
- ½ cup unsweetened cocoa powder
- 1 tsp baking powder
- ½ tsp baking soda
- ½ tsp salt
- 2 large eggs
- ½ cup whole milk
- ½ cup vegetable oil
- 2 tsp vanilla extract
- ½ cup boiling water
- 1 ½ cups chocolate candy melts
- 2 tbsp coconut oil
- Sprinkles, edible glitter, or crushed nuts (optional)
Instructions:
- Preheat the oven to 350°F (175°C). Grease and line your baking pan with parchment paper.
- Combine dry ingredients (flour, sugar, cocoa powder, baking powder, baking soda, and salt) in a large bowl.
- Whisk wet ingredients (eggs, milk, oil, and vanilla) in a separate bowl.
- Pour the wet mixture into the dry ingredients, mixing until just combined.
- Stir in boiling water until the batter is smooth (the batter will be thin).
- Bake for 25-30 minutes, or until a toothpick inserted comes out clean. Let the cake cool completely.
- Crumble the cooled cake into a large mixing bowl until fine crumbs remain.
- Add a small amount (about ½ cup) of frosting to the crumbs, mixing until sticky but not overly moist.
- Form into 1-inch balls and place them on a lined baking sheet. Chill for about 15 minutes to firm up.
- Melt chocolate candy melts with coconut oil until smooth.
- Dip the tip of each cake pop stick into the melted chocolate and then insert it into each ball.
- Coat the cake pops in the remaining melted chocolate, ensuring even coverage.
- Decorate with sprinkles or other toppings while still wet and allow to set in a styrofoam block or cake pop stand.
