Ingredients:

  • 1 ½ cups all-purpose flour
  • 1 cup granulated sugar
  • ½ cup unsweetened cocoa powder
  • 1 tsp baking powder
  • ½ tsp baking soda
  • ½ tsp salt
  • 2 large eggs
  • ½ cup whole milk
  • ½ cup vegetable oil
  • 2 tsp vanilla extract
  • ½ cup boiling water
  • 1 ½ cups chocolate candy melts
  • 2 tbsp coconut oil
  • Sprinkles, edible glitter, or crushed nuts (optional)

Instructions:

  1. Preheat the oven to 350°F (175°C). Grease and line your baking pan with parchment paper.
  2. Combine dry ingredients (flour, sugar, cocoa powder, baking powder, baking soda, and salt) in a large bowl.
  3. Whisk wet ingredients (eggs, milk, oil, and vanilla) in a separate bowl.
  4. Pour the wet mixture into the dry ingredients, mixing until just combined.
  5. Stir in boiling water until the batter is smooth (the batter will be thin).
  6. Bake for 25-30 minutes, or until a toothpick inserted comes out clean. Let the cake cool completely.
  7. Crumble the cooled cake into a large mixing bowl until fine crumbs remain.
  8. Add a small amount (about ½ cup) of frosting to the crumbs, mixing until sticky but not overly moist.
  9. Form into 1-inch balls and place them on a lined baking sheet. Chill for about 15 minutes to firm up.
  10. Melt chocolate candy melts with coconut oil until smooth.
  11. Dip the tip of each cake pop stick into the melted chocolate and then insert it into each ball.
  12. Coat the cake pops in the remaining melted chocolate, ensuring even coverage.
  13. Decorate with sprinkles or other toppings while still wet and allow to set in a styrofoam block or cake pop stand.
