Ingredients:
- 1 ¾ cups all-purpose flour
- 1 ½ cups granulated sugar
- ¾ cup unsweetened cocoa powder
- 1 ½ tsp baking powder
- 1 ½ tsp baking soda
- 1 tsp salt
- 2 large eggs
- 1 cup whole milk
- ½ cup vegetable oil
- 2 tsp pure vanilla extract
- 1 cup boiling water
- 1 cup unsalted butter, softened
- 4 cups powdered sugar
- ½ cup unsweetened cocoa powder
- ¼ cup heavy cream
- 1 tsp vanilla extract
- 16 oz candy melts or chocolate wafers
- Lollipop sticks
Instructions:
- Preheat the oven to 350°F (175°C).
- In a large bowl, whisk together flour, sugar, cocoa powder, baking powder, baking soda, and salt. Add eggs, milk, oil, and vanilla; beat on medium speed for 2 minutes. Stir in boiling water until combined.
- Pour batter into a greased 9x13 inch cake pan and bake for 25-30 minutes until a toothpick inserted comes out clean.
- Allow cake to cool completely in the pan before transferring it to a wire rack.
- Beat softened butter until creamy; gradually add powdered sugar and cocoa powder. Mix in heavy cream and vanilla until smooth.
- Crumble cooled cake into a large bowl and mix in frosting until the mixture holds together.
- Shape mixture into 1-inch balls and place on a baking sheet lined with parchment. Chill for 30 minutes.
- Melt candy melts according to package instructions until smooth.
- Insert lollipop sticks into each chilled cake ball, dip into melted chocolate, and return to parchment to set.
- Refrigerate until the coating is set.
