Ingredients:

  • 1 ¾ cups all-purpose flour
  • 1 ½ cups granulated sugar
  • ¾ cup unsweetened cocoa powder
  • 1 ½ tsp baking powder
  • 1 ½ tsp baking soda
  • 1 tsp salt
  • 2 large eggs
  • 1 cup whole milk
  • ½ cup vegetable oil
  • 2 tsp pure vanilla extract
  • 1 cup boiling water
  • 1 cup unsalted butter, softened
  • 4 cups powdered sugar
  • ½ cup unsweetened cocoa powder
  • ¼ cup heavy cream
  • 1 tsp vanilla extract
  • 16 oz candy melts or chocolate wafers
  • Lollipop sticks

Instructions:

  1. Preheat the oven to 350°F (175°C).
  2. In a large bowl, whisk together flour, sugar, cocoa powder, baking powder, baking soda, and salt. Add eggs, milk, oil, and vanilla; beat on medium speed for 2 minutes. Stir in boiling water until combined.
  3. Pour batter into a greased 9x13 inch cake pan and bake for 25-30 minutes until a toothpick inserted comes out clean.
  4. Allow cake to cool completely in the pan before transferring it to a wire rack.
  5. Beat softened butter until creamy; gradually add powdered sugar and cocoa powder. Mix in heavy cream and vanilla until smooth.
  6. Crumble cooled cake into a large bowl and mix in frosting until the mixture holds together.
  7. Shape mixture into 1-inch balls and place on a baking sheet lined with parchment. Chill for 30 minutes.
  8. Melt candy melts according to package instructions until smooth.
  9. Insert lollipop sticks into each chilled cake ball, dip into melted chocolate, and return to parchment to set.
  10. Refrigerate until the coating is set.
