  • 1 cup (170g) semi-sweet chocolate chips
  • 2 large eggs
  • 2 large egg yolks
  • ½ cup (100g) granulated sugar
  • 1 teaspoon vanilla extract
  • ¼ cup (30g) all-purpose flour
  • Pinch of salt
  • Powdered sugar, for dusting
  • Fresh berries (e.g., raspberries or strawberries)
  • Vanilla ice cream or whipped cream (optional)

Instructions:

  1. Preheat the oven to 425°F (220°C).
  2. Grease ramekins with butter and dust with flour, tapping out excess.
  3. Melt the chocolate and butter together in a double boiler or microwave until smooth; stir occasionally.
  4. Whisk eggs, egg yolks, and sugar in a separate mixing bowl until pale and slightly thickened.
  5. Add melted chocolate mixture to the eggs; whisk until fully combined.
  6. Stir in vanilla, flour, and salt until just incorporated.
  7. Divide the batter evenly among the prepared ramekins.
  8. Place ramekins on a baking tray and bake for 12-14 minutes until the edges are firm but the centers are soft.
  9. Let cool for 1 minute, then carefully invert each ramekin onto a plate to release the cake.
  10. Dust with powdered sugar and serve immediately with fresh berries and ice cream, if desired.
