Ingredients:

  • 1 ¼ cups (150g) all-purpose flour
  • ¼ teaspoon salt
  • ½ cup (115g) unsalted butter, cold and cubed
  • 3 tablespoons (45ml) ice water
  • 2 medium (300g) apples, peeled, cored, and diced (e.g., Granny Smith or Honeycrisp)
  • ¼ cup (50g) brown sugar
  • 1 teaspoon ground cinnamon
  • 1 tablespoon (15ml) lemon juice
  • 1 tablespoon (15g) cornstarch
  • 1 large egg, beaten (for egg wash)
  • Additional sugar for sprinkling (optional)

Instructions:

  1. In a mixing bowl, combine flour and salt.
  2. Cut in the cold butter until the mixture resembles coarse crumbs.
  3. Add ice water, one tablespoon at a time, until the dough comes together.
  4. Wrap the dough in plastic wrap and chill for 30 minutes.
  5. In a bowl, toss the diced apples with brown sugar, cinnamon, lemon juice, and cornstarch until evenly coated.
  6. On a floured surface, roll out the chilled dough to about ¼ inch thick.
  7. Cut the dough into squares (about 4x4 inches).
  8. Place a spoonful of apple filling in the center of each square.
  9. Fold the dough over the filling to create a triangle and press to seal. Crimp edges with a fork.
  10. Preheat the oven to 375°F (190°C). Line a baking sheet with parchment paper.
  11. Brush turnovers with beaten egg and sprinkle sugar on top if desired.
  12. Bake for 20-25 minutes, or until golden brown and puffed up.
  13. Allow to cool slightly before serving.
