Ingredients:
- 1 ¼ cups (150g) all-purpose flour
- ¼ teaspoon salt
- ½ cup (115g) unsalted butter, cold and cubed
- 3 tablespoons (45ml) ice water
- 2 medium (300g) apples, peeled, cored, and diced (e.g., Granny Smith or Honeycrisp)
- ¼ cup (50g) brown sugar
- 1 teaspoon ground cinnamon
- 1 tablespoon (15ml) lemon juice
- 1 tablespoon (15g) cornstarch
- 1 large egg, beaten (for egg wash)
- Additional sugar for sprinkling (optional)
Instructions:
- In a mixing bowl, combine flour and salt.
- Cut in the cold butter until the mixture resembles coarse crumbs.
- Add ice water, one tablespoon at a time, until the dough comes together.
- Wrap the dough in plastic wrap and chill for 30 minutes.
- In a bowl, toss the diced apples with brown sugar, cinnamon, lemon juice, and cornstarch until evenly coated.
- On a floured surface, roll out the chilled dough to about ¼ inch thick.
- Cut the dough into squares (about 4x4 inches).
- Place a spoonful of apple filling in the center of each square.
- Fold the dough over the filling to create a triangle and press to seal. Crimp edges with a fork.
- Preheat the oven to 375°F (190°C). Line a baking sheet with parchment paper.
- Brush turnovers with beaten egg and sprinkle sugar on top if desired.
- Bake for 20-25 minutes, or until golden brown and puffed up.
- Allow to cool slightly before serving.
