Ingredients:
- 3 large ripe bananas (about 1 ½ cups mashed, or 450g)
- 1/3 cup (75g) unsalted butter, melted
- 3/4 cup (150g) granulated sugar
- 1 large egg, beaten
- 1 teaspoon vanilla extract
- 1 teaspoon baking soda
- Pinch of salt
- 1 teaspoon ground cinnamon
- 1 ½ cups (190g) all-purpose flour
- 1/2 cup (90g) chopped walnuts or pecans (optional)
- 1/2 cup (90g) chocolate chips (optional)
Instructions:
- Preheat the oven to 350°F (175°C) and grease the muffin tin or line with paper liners.
- In a large mixing bowl, mash the ripe bananas until smooth.
- Add the melted butter to the bananas and mix until combined.
- Stir in the sugar, beaten egg, and vanilla extract until well blended.
- Sprinkle the baking soda, salt, and cinnamon over the mixture; stir to combine.
- Gradually add the flour, folding gently with a rubber spatula until just combined.
- If using, fold in walnuts or chocolate chips.
- Divide the batter evenly among the muffin cups, filling each about 2/3 full.
- Bake in the preheated oven for 18-22 minutes until golden, and a toothpick inserted comes out clean.
- Cool in the tin for 5 minutes, then transfer to a wire rack to cool completely.
