Ingredients:

  • 3 large ripe bananas (about 1 ½ cups mashed, or 450g)
  • 1/3 cup (75g) unsalted butter, melted
  • 3/4 cup (150g) granulated sugar
  • 1 large egg, beaten
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking soda
  • Pinch of salt
  • 1 teaspoon ground cinnamon
  • 1 ½ cups (190g) all-purpose flour
  • 1/2 cup (90g) chopped walnuts or pecans (optional)
  • 1/2 cup (90g) chocolate chips (optional)

Instructions:

  1. Preheat the oven to 350°F (175°C) and grease the muffin tin or line with paper liners.
  2. In a large mixing bowl, mash the ripe bananas until smooth.
  3. Add the melted butter to the bananas and mix until combined.
  4. Stir in the sugar, beaten egg, and vanilla extract until well blended.
  5. Sprinkle the baking soda, salt, and cinnamon over the mixture; stir to combine.
  6. Gradually add the flour, folding gently with a rubber spatula until just combined.
  7. If using, fold in walnuts or chocolate chips.
  8. Divide the batter evenly among the muffin cups, filling each about 2/3 full.
  9. Bake in the preheated oven for 18-22 minutes until golden, and a toothpick inserted comes out clean.
  10. Cool in the tin for 5 minutes, then transfer to a wire rack to cool completely.
