  • 3 ripe bananas, mashed
  • 1/3 cup unsalted butter, melted
  • 1 teaspoon vanilla extract
  • 2 large eggs, beaten
  • 1 cup granulated sugar
  • 1 teaspoon baking soda

  • 1 1/2 cups all-purpose flour
  • 1/2 cup walnuts or pecans, chopped (optional)

Instructions:

  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, mash the bananas until smooth.
  3. Stir in the melted butter until well combined.
  4. Add vanilla extract and beaten eggs, mixing thoroughly.
  5. In a separate bowl, whisk together granulated sugar, baking soda, and salt.
  6. Gradually incorporate the dry ingredients into the banana mixture, stirring just until combined (avoid over-mixing).
  7. Fold in chopped nuts if using.
  8. Spoon the batter evenly into a greased muffin tin, filling each cup about 2/3 full.
  9. Bake in the preheated oven for 20-25 minutes or until a toothpick inserted in the center comes out clean.
  10. Allow muffins to cool in the tin for 5 minutes before transferring to a cooling rack.
