- 3 ripe bananas, mashed
- 1/3 cup unsalted butter, melted
- 1 teaspoon vanilla extract
- 2 large eggs, beaten
- 1 cup granulated sugar

- 1 1/2 cups all-purpose flour
- 1/2 cup walnuts or pecans, chopped (optional)
Instructions:
- Preheat your oven to 350°F (175°C).
- In a large bowl, mash the bananas until smooth.
- Stir in the melted butter until well combined.
- Add vanilla extract and beaten eggs, mixing thoroughly.
- In a separate bowl, whisk together granulated sugar, baking soda, and salt.
- Gradually incorporate the dry ingredients into the banana mixture, stirring just until combined (avoid over-mixing).
- Fold in chopped nuts if using.
- Spoon the batter evenly into a greased muffin tin, filling each cup about 2/3 full.
- Bake in the preheated oven for 20-25 minutes or until a toothpick inserted in the center comes out clean.
- Allow muffins to cool in the tin for 5 minutes before transferring to a cooling rack.
