Ingredients:

  • 2 ½ cups (325g) all-purpose flour
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • ¼ teaspoon salt
  • ½ cup (115g) unsalted butter, softened
  • ¾ cup (150g) granulated sugar
  • ½ cup (100g) brown sugar, packed
  • 1 large egg
  • 1 teaspoon pure vanilla extract
  • 1 ½ cups (225g) fresh blueberries

Instructions:

  1. Preheat your oven to 350°F (175°C).
  2. Line two baking sheets with parchment paper.
  3. In a bowl, whisk together flour, baking powder, baking soda, and salt. Set aside.
  4. In a large mixing bowl, beat softened butter, granulated sugar, and brown sugar until creamy.
  5. Add the egg and vanilla extract to the butter mixture. Beat until well combined.
  6. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  7. Gently fold in blueberries being careful not to mash them.
  8. Cover the dough and chill in the refrigerator for 30 minutes.
  9. Using a cookie scoop or two spoons, drop dough onto prepared baking sheets, spacing them about 2 inches apart.
  10. Bake in preheated oven for 12-15 minutes, or until the edges are golden brown.
  11. Let the cookies cool on the baking sheets for 5 minutes before transferring them to a cooling rack.
