Ingredients:
- 2 ½ cups (325g) all-purpose flour
- 1 teaspoon baking powder
- ½ teaspoon baking soda
- ¼ teaspoon salt
- ½ cup (115g) unsalted butter, softened
- ¾ cup (150g) granulated sugar
- ½ cup (100g) brown sugar, packed
- 1 large egg
- 1 teaspoon pure vanilla extract
- 1 ½ cups (225g) fresh blueberries
Instructions:
- Preheat your oven to 350°F (175°C).
- Line two baking sheets with parchment paper.
- In a bowl, whisk together flour, baking powder, baking soda, and salt. Set aside.
- In a large mixing bowl, beat softened butter, granulated sugar, and brown sugar until creamy.
- Add the egg and vanilla extract to the butter mixture. Beat until well combined.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
- Gently fold in blueberries being careful not to mash them.
- Cover the dough and chill in the refrigerator for 30 minutes.
- Using a cookie scoop or two spoons, drop dough onto prepared baking sheets, spacing them about 2 inches apart.
- Bake in preheated oven for 12-15 minutes, or until the edges are golden brown.
- Let the cookies cool on the baking sheets for 5 minutes before transferring them to a cooling rack.
