Ingredients:

  • 2 ½ cups all-purpose flour
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 8 oz cream cheese, softened
  • ¼ cup granulated sugar
  • 1 teaspoon vanilla extract
  • 1 cup heavy whipping cream
  • 2 cups assorted fresh fruits (e.g., strawberries, blueberries, kiwi, bananas, and peaches)

Instructions:

  1. Preheat your oven to 350°F (175°C).
  2. In a medium bowl, whisk together the flour, baking powder, baking soda, and salt. In a large bowl, cream together the softened butter and sugar until light and fluffy. Beat in the egg and vanilla, then gradually add the flour mixture, mixing until combined.
  3. Roll out the dough to about ¼ inch thick on a floured surface. Use cookie cutters to create circular bases or shape them into pizzas with your hands. Place on a baking sheet lined with parchment paper. Bake for 10-12 minutes or until edges are just starting to turn golden.
  4. Remove from the oven and let cool on the baking sheet for a couple of minutes before transferring to a cooling rack.
  5. In a bowl, whip the cream cheese until smooth, then mix in sugar and vanilla. In another bowl, whip the heavy cream until soft peaks form, then fold it into the cream cheese mixture until combined and fluffy.
  6. Once cookies are completely cool, spread a generous layer of frosting on each cookie. Top with an assortment of fresh fruits.
  7. Slice into wedges if desired, serve immediately, or chill in the refrigerator for a bit before serving.
