Ingredients:

  • 1 ½ cups (180g) grated zucchini, excess moisture squeezed out
  • 1 cup (200g) granulated sugar
  • ½ cup (120ml) vegetable oil or melted coconut oil
  • 2 large eggs
  • 1 teaspoon (5ml) vanilla extract
  • 1 ½ cups (180g) all-purpose flour
  • 1 teaspoon (5g) baking soda
  • ¼ teaspoon (1g) baking powder
  • ½ teaspoon (2g) salt
  • 1 teaspoon (2g) ground cinnamon
  • ½ teaspoon (1g) ground nutmeg (optional)
  • ½ cup (80g) chopped walnuts or pecans (optional)

Instructions:

  1. Preheat the oven to 350°F (175°C).
  2. Prepare the loaf pan: Grease or line with parchment paper.
  3. In a bowl, whisk together sugar, oil, eggs, and vanilla until smooth.
  4. Fold the grated zucchini into the wet mixture.
  5. In another bowl, whisk together flour, baking soda, baking powder, salt, and spices.
  6. Gradually fold the dry mixture into the wet mixture until just combined.
  7. Gently fold in chopped nuts if using.
  8. Pour batter into the prepared loaf pan and smooth the top.
  9. Bake for 50-60 minutes, or until a toothpick inserted comes out clean and the top is golden.
  10. Cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
