Ingredients:
- 1 ½ cups (180g) grated zucchini, excess moisture squeezed out
- 1 cup (200g) granulated sugar
- ½ cup (120ml) vegetable oil or melted coconut oil
- 2 large eggs
- 1 teaspoon (5ml) vanilla extract
- 1 ½ cups (180g) all-purpose flour
- 1 teaspoon (5g) baking soda
- ¼ teaspoon (1g) baking powder
- ½ teaspoon (2g) salt
- 1 teaspoon (2g) ground cinnamon
- ½ teaspoon (1g) ground nutmeg (optional)
- ½ cup (80g) chopped walnuts or pecans (optional)
Instructions:
- Preheat the oven to 350°F (175°C).
- Prepare the loaf pan: Grease or line with parchment paper.
- In a bowl, whisk together sugar, oil, eggs, and vanilla until smooth.
- Fold the grated zucchini into the wet mixture.
- In another bowl, whisk together flour, baking soda, baking powder, salt, and spices.
- Gradually fold the dry mixture into the wet mixture until just combined.
- Gently fold in chopped nuts if using.
- Pour batter into the prepared loaf pan and smooth the top.
- Bake for 50-60 minutes, or until a toothpick inserted comes out clean and the top is golden.
- Cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
