Ingredients:
- 3 medium ripe bananas (approximately 12 oz or 340 g)
- 1/3 cup (75 g) unsalted butter, melted
- 1 teaspoon vanilla extract
- 1 large egg
- 1 cup (200 g) granulated sugar
- 1 teaspoon baking soda
- 1/4 teaspoon salt
- 1 1/2 cups (190 g) all-purpose flour
- Optional: 1/2 cup (80 g) chopped walnuts or pecans
- Optional: Powdered sugar for dusting
Instructions:
- Preheat the oven to 350°F (175°C).
- Grease the cake pan with butter or line it with parchment paper.
- In a bowl, mash the bananas with a fork until smooth. Add melted butter, vanilla extract, and egg, whisk until combined.
- In another bowl, mix sugar, baking soda, salt, and flour.
- Gradually add the dry mixture to the wet ingredients, folding gently until just combined.
- If using, fold in chopped nuts.
- Pour batter into the prepared pan and bake for 25-30 minutes, or until a toothpick inserted in the center comes out clean.
- Allow the cake to cool in the pan for 10 minutes, then transfer it to a wire rack to cool completely. Dust with powdered sugar before serving, if desired.
