Ingredients:

  • 3 medium ripe bananas (approximately 12 oz or 340 g)
  • 1/3 cup (75 g) unsalted butter, melted
  • 1 teaspoon vanilla extract
  • 1 large egg
  • 1 cup (200 g) granulated sugar
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 1/2 cups (190 g) all-purpose flour
  • Optional: 1/2 cup (80 g) chopped walnuts or pecans
  • Optional: Powdered sugar for dusting

Instructions:

  1. Preheat the oven to 350°F (175°C).
  2. Grease the cake pan with butter or line it with parchment paper.
  3. In a bowl, mash the bananas with a fork until smooth. Add melted butter, vanilla extract, and egg, whisk until combined.
  4. In another bowl, mix sugar, baking soda, salt, and flour.
  5. Gradually add the dry mixture to the wet ingredients, folding gently until just combined.
  6. If using, fold in chopped nuts.
  7. Pour batter into the prepared pan and bake for 25-30 minutes, or until a toothpick inserted in the center comes out clean.
  8. Allow the cake to cool in the pan for 10 minutes, then transfer it to a wire rack to cool completely. Dust with powdered sugar before serving, if desired.
