Ingredients:
- 1 3/4 cups (210g) all-purpose flour, plus more for dusting the pan
- 3/4 cup (75g) unsweetened cocoa powder
- 1 teaspoon baking soda
- 1/2 teaspoon baking powder
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon salt
- 3 large eggs
- 3/4 cup (150g) granulated sugar
- 1/2 cup (100g) packed light brown sugar
- 1/2 cup (120ml) vegetable oil (or melted coconut oil)
- 2 teaspoons vanilla extract
- 2 cups (200g) grated zucchini, excess moisture squeezed out
- 1 cup (170g) semi-sweet chocolate chips
Instructions:
- Preheat oven to 350°F (175°C). Grease and flour a 9x5 inch loaf pan.
- In a large bowl, whisk together flour, cocoa powder, baking soda, baking powder, cinnamon, and salt.
- In a separate medium bowl, whisk together eggs, granulated sugar, brown sugar, oil, and vanilla extract.
- Pour the wet ingredients into the dry ingredients and mix until just combined. Do not overmix.
- Gently fold in the grated zucchini and chocolate chips.
- Pour the batter into the prepared loaf pan and spread evenly.
- Bake for 50-60 minutes, or until a toothpick inserted into the center comes out with a few moist crumbs attached.
- Let the bread cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.
