Ingredients:

  • 1 cup (2 sticks/226g) unsalted butter, softened
  • 3-4 cups (360-480g) powdered sugar, sifted
  • 2-4 tablespoons (30-60ml) milk or heavy cream
  • 1 teaspoon (5ml) vanilla extract
  • Pinch of salt

Instructions:

  1. In a large bowl, cream the softened butter using a mixer until light and fluffy.
  2. Gradually add the sifted powdered sugar, one cup at a time, mixing on low speed.
  3. Add 2 tablespoons of milk (or cream) and the vanilla extract. Mix on low speed until just combined.
  4. If the icing is too thick, add more milk, one tablespoon at a time, until desired consistency is reached. If it's too thin, add more powdered sugar, one-quarter cup at a time.
  5. Beat the icing on medium-high speed for 2-3 minutes, until light and fluffy.
