Ingredients:
- 1 lb (450 g) ground beef or ground turkey
- 1 packet (1 oz / 28 g) taco seasoning mix
- 1 can (15 oz / 425 g) black beans, rinsed and drained
- 1 can (15 oz / 425 g) corn, drained
- 1 can (16 oz / 450 g) salsa (mild, medium, or hot based on preference)
- 8 (6-inch) corn or flour tortillas
- 2 cups (8 oz / 225 g) shredded cheddar cheese
- 1 cup (4 oz / 115 g) shredded mozzarella cheese
- Fresh cilantro, for garnish
- Sour cream, for serving
- Sliced jalapeños, for added heat
Instructions:
- Preheat your oven to 350°F (175°C).
- In a large skillet over medium heat, brown the ground meat. Drain excess fat if necessary. Stir in the taco seasoning, black beans, corn, and salsa; cook for 2-3 minutes until heated through.
- Spread a thin layer of the meat mixture in the bottom of the baking dish. Place a layer of tortillas on top. Add half of the remaining meat mixture, followed by 1 cup of cheddar cheese. Repeat layers (tortillas, meat mixture, cheese). Finish with a final layer of tortillas topped with remaining mozzarella and cheddar cheese.
- Cover the dish with aluminum foil (spray foil with cooking spray to prevent sticking). Bake in the preheated oven for 20 minutes. Remove the foil and bake for an additional 10 minutes until cheese is bubbly and golden.
- Allow to rest for 5-10 minutes before slicing. Garnish with cilantro and serve with sour cream and jalapeños.
