Ingredients:
- 3 ripe bananas (approximately 1 ½ cups mashed)
- ½ cup (115g) unsalted butter, melted
- ¾ cup (150g) granulated sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 teaspoon baking soda
- ½ teaspoon baking powder
- ¼ teaspoon salt
- 1 ½ cups (180g) all-purpose flour
- ½ teaspoon ground cinnamon (optional)
- ½ cup (75g) chocolate chips (optional)
- ½ cup (75g) chopped walnuts or pecans (optional)
Instructions:
- Preheat oven to 350°F (175°C) and prepare the muffin tin with liners or grease.
- Mash the ripe bananas in a mixing bowl until smooth.
- Combine melted butter and sugar with bananas, mixing well.
- Whisk in the eggs and vanilla extract until smooth.
- In a separate bowl, whisk together flour, baking soda, baking powder, salt, and cinnamon (if using).
- Gradually add the dry ingredients to the wet mixture, folding gently until just combined.
- Fold in optional chocolate chips or nuts if desired.
- Scoop the batter into muffin tins, filling each about ¾ full.
- Bake for 20-25 minutes, or until a toothpick inserted into the center comes out clean.
- Cool in the pan for a few minutes before transferring to a wire rack.
