Ingredients:

  • 3 ripe bananas (approximately 1 ½ cups mashed)
  • ½ cup (115g) unsalted butter, melted
  • ¾ cup (150g) granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking soda
  • ½ teaspoon baking powder
  • ¼ teaspoon salt
  • 1 ½ cups (180g) all-purpose flour
  • ½ teaspoon ground cinnamon (optional)
  • ½ cup (75g) chocolate chips (optional)
  • ½ cup (75g) chopped walnuts or pecans (optional)

Instructions:

  1. Preheat oven to 350°F (175°C) and prepare the muffin tin with liners or grease.
  2. Mash the ripe bananas in a mixing bowl until smooth.
  3. Combine melted butter and sugar with bananas, mixing well.
  4. Whisk in the eggs and vanilla extract until smooth.
  5. In a separate bowl, whisk together flour, baking soda, baking powder, salt, and cinnamon (if using).
  6. Gradually add the dry ingredients to the wet mixture, folding gently until just combined.
  7. Fold in optional chocolate chips or nuts if desired.
  8. Scoop the batter into muffin tins, filling each about ¾ full.
  9. Bake for 20-25 minutes, or until a toothpick inserted into the center comes out clean.
  10. Cool in the pan for a few minutes before transferring to a wire rack.
